SUMMARY
The Foundry Grill is an award winning 3 meal restaurant in the heart of Provo Canyon. Focused on rustic American traditional food, we aim to provide a unique dining experience not found elsewhere. Working closely with the Chef de Cuisine, the sous chef will assist in daily duties such as, menu development, staff training, creating specials and managing cleaning tasks. Candidates who apply, should feel comfortable leading a team in high stress situations. Previous leadership experience of Lead Line cook or higher is requested.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.
Work with Restaurant Chef and Resort Chef in menu development and product research.
Make the schedule for Cooks and Dishwashers based on business needs.
Work with Purchasing Agent in ordering- making sure the par levels are maintained.
Responsible for daily pre shift meetings with Cooks and Dishwashers to discuss operations and concerns.
Work with Restaurant Chef and Purchasing Agent in monthly inventory counts.
Manage the productivity of other Cooks and Dishwashers- making sure that everyone is busy with their work.
Provide support to Restaurant Chef in managing Labor costs and Food costs.
Inspect all stations making sure that product is fully stocked for service.
Provide support to other cooks and dishwashers.
Expedite service from the kitchen in a timely manner- ticket times are according to Chefs standards.
Work with Restaurant Chef regarding ordering needs, equipment maintenance (preventative & emergency).
Ensure quality and quantity of foodstuffs according to standards and specifications as determined by the Restaurant Chef.
Ensure food is prepared & cooked according to recipes.
Cut, trim and bone meats and poultry for cooking.
Portion cooked foods according to size of portions and methods of garnishing.
Clean and sanitize equipment used.
Provide support to Chef and production leadership to subordinate positions.
Responsible for promoting positive morale in kitchen
Assist Chef with menu planning.
Assist Chef with monthly inventory of all food products.
Prepare and maintain the station used for prep cooks.
Maintain sanitary working environment at all times.
Assist Lead Line Cook or Restaurant Chef in creating any specials, soups etc.
Order products in the absence of the Restaurant Chef.
Supervise production when Chef is not available.
Handle any performance or staff problems and report to Restaurant or Resort Chef in a timely manner.
Attend meetings in the absence of the Chef.
Work proficiently in the capacity of Chef in all Sundance kitchen outlets. May be required to work in all kitchen outlets as Chef as business or staffing needs dictate.

SUPERVISORY RESPONSIBILITIES
In the absence of the Restaurant Chef, carries out supervisory responsibilities in accordance with the organization's policies and applicable laws.
Responsibilities include interviewing, hiring, and training employees; planning, assigning, and directing work; appraising performance; rewarding and disciplining employees; addressing complaints and resolving problems. Complete all applicable paperwork for the above responsibilities and submit to HR in a timely manner.

EDUCATION and/or EXPERIENCE
Associate's degree (A. A.) or equivalent from two-year college or technical school; or one to three years related experience and/or training; or equivalent combination of education and experience.
Good working knowledge of fresh seasonal produce; meat and poultry preparation for cooking. Production supervisory skills and experience required.

TECHNICAL/COMPUTER SKILLS
Must possess a working knowledge of timekeeping systems, word processing, spreadsheets, internet navigation and electronic mail.

CERTIFICATIONS, LICENSES, REGISTRATIONS
Must possess or obtain a valid food handlers permit within 30 days of employment.

LANGUAGE SKILLS
Ability to read and comprehend simple instructions, short correspondence, and memos. Ability to write simple correspondence. Ability to effectively present information in one-on-one and small group situations to customers, clients, and other employees of the organization. Ability to effectively communicate with co-workers verbally and in writing in English and Spanish.

MATHEMATICAL SKILLS
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.
