The Cake Decorator will assist the Pastry Chef in the preparation and presentation of high-quality wedding cakes, specialty cakes, and uphold the standards and policies of a 5 Star luxury resort pastry kitchen.

Responsibilities,

•Create a weekly production bake list, in detail, to ensure that cakes for all BEO (Banquet Event Order), REO (Restaurant Event Order) and standard orders are completed.

•Bake cakes and prepare fillings and frostings from scratch according to standard recipes.

•Assemble, fill, and stack cakes for all provided orders according to standard recipes and procedures.

•Decorate single and multi-tiered special occasion and wedding cakes according to requested designs and themes. Re-create intricate wedding cake designs from photos provided by the Executive Pastry Chef.

•Produce “life-like” sugar flowers for special occasion and wedding cakes.

•Create and oversee the planning and execution of holiday cupcakes and cakes.

•Visually inspect appearance of baked cakes for proper color combination and overall presentation to maintain appeal.

•Manage and complete cake consultation/tastings with wedding couples for Salamander Middleburg and offsite-venue weddings. 

•Assist the pastry team when needed with pastry and baked items for buffet, banquet and restaurant use according to standard recipes. 

•Manage the rotation of food products so as to comply with health department regulations, limit food waste, and maintain budgeted food cost.

Education/Experience

•Must be 18 years of age or older. 

•High school or equivalent education required.

•4 years cake decorating and baking experience in a commercial bakery or hotel that produces large wedding cakes.

•Culinary School Associates diploma in Baking and Pastry Arts is preferred

Requirements

•Must have full work availability for AM, PM, Weekends, and holidays.

•Requires good communication skills, both verbal and written. 

•Thorough knowledge of pastry items and cakes.

•Be SERV Safe certified.
