This role is responsible for all aspects of restaurant operations, staff leadership, financial performance, and ensuring COA upholds the luxury standards of The Drake Oak Brook. Lead, coach, and support all FOH and BOH team members. Maintain a strong presence on the floor, managing guest satisfaction and issue resolution. Uphold brand standards and service expectations aligned with The Drake Oak Brook. Manage P&L, budgets, forecasting, and cost controls. Monitor labor, food cost, beverage cost, and purchasing to achieve financial targets. Approve weekly schedules and adjust staffing based on business needs.Analyze sales reports, Micros data, and financials to drive performance. Recruit, interview, and hire high?quality restaurant staff. Lead onboarding, training, and ongoing development for all employees. Conduct performance evaluations and administer corrective actions as needed. Foster a positive, collaborative, and professional work environment. Ensure every guest receives exceptional service that reflects the hotels luxury standards. Address and resolve escalated guest concerns promptly and professionally. Monitor and respond to guest feedback from OpenTable, Google, and internal surveys. Ensure compliance with all food safety, sanitation, and alcohol service regulations. Maintain a clean, safe, and organized environment for guests and employees. Enforce company policies, procedures, and safety standards. Oversee ordering, receiving, and inventory for food, beverage, and supplies. Collaborate with US Foods and beverage partners to maintain proper par levels. Review and approve invoices and vendor documentation. Partner with hotel leadership on promotions, events, and seasonal initiatives. Support restaurant participation in hotel packages, group bookings, and catering. Identify opportunities to grow revenue, covers, and repeat business. Oversee payroll approvals, tip compliance, Micros and UKG reporting. Maintain employee records, training documentation, and compliance files. Participate in weekly hotel operations meetings. Qualifications 35+ years of restaurant management experience, hotel or upscale dining preferred. Strong leadership, communication, and team development skills. Proven financial management experience with P&L accountability. Knowledge of Micros, UKG, and standard restaurant systems a plus. Ability to work a flexible schedule, including weekends and holidays.
