Role Summary
PrimeFish Cellar is seeking a sushi chef who combines precise technique with ingredient-driven creativity. You'll handle whole-fish breakdown, nigiri and maki production, while collaborating with our serving staff to provide delightful guest experiences.
Key Responsibilities
- Execute daily sushi prep and service: rice cooking and seasoning, fish butchery, maki/uramaki, nigiri, sashimi, all at high standards.
- Maintain product quality: monitor fish condition, moisture, temperature, marinades, and garnishes.
- Uphold food safety: strict station sanitation, cross-contamination control, FIFO rotation.
- Control yield and waste: accurate trimming, portioning, and inventory counts.
- Service readiness: organize equipment, sharpen and maintain knives and smallwares, keep the sushi station clean, labeled, and fully stocked.
- Admin basics: receive and store seafood to spec, verify invoices, help with inventory, and communicate low-stock or quality issues promptly.
Qualifications
- Professional(2+ yrs) sushi experience required in fine-casual or upscale settings.Strong knife skills and accuracy in nigiri shaping, fish breakdown, and portioning.
- Mastery of rice fundamentals: washing, soaking, cooking, seasoning, and service-time holding.
- Working knowledge of Edomae techniques such as curing, marinating, light aging, and umami development.
- Food safety proficiency; ServSafe or equivalent certification is a plus.
- Collaboration mindset and calm, clean, organized station habits in a fast-paced service.
- Able to stand for extended periods and lift up to 50 lbs. Punctual, reliable, team-oriented.
