BASIC FUNCTION (the primary purpose of this position):

Keep the kitchen premises in a clean and orderly condition, by performing the following duties.

PRINCIPAL ACTIVITIES & RESPONSIBILITIES:

• Promote a clean, safe, healthy and friendly work environment for employees and guests; report any direct safety issues to Sous Chef.
• Keeping all food and beverage areas clean.
• Proper operation of the dishwasher in the Roxy kitchen.
• Stores all products in accordance to Oregon Food safety regulations.
• Sanitary scraping and cleaning of all flatware, glasses, dishes, pots and pans.
• Sanitary storage of all flatware, glasses, dishes, pots and pans.
• Transporting soiled dishes and flatware from the wait station and serving areas in Roxy's Bar to the dish staging area for cleaning.
• Restocking all wait stations with clean flatware, glassware and dishes.
• Sweeping and mopping all areas of the kitchen floor. (Including washing of floor mats)
• Using a variety of cleaning compounds and chemicals in the kitchen area.
• Detailed cleaning projects clearly defined by the kitchen tech cleaning lists or that have been assigned specifically.
• Removal of all trash, recyclables, cardboard, and soiled linens from all areas of the kitchen.
• Cleaning and changing of the fryer system on a set schedule or as needed.
• Responsible for sanitary transportation of food to the approved storage area. Items are to be removed from all packaging if possible and stored on the shelves in ready to use order after proper rotation (FIFO).
• Other duties as assigned.

POSITION REQUIREMENTS (objective educational or technical training required; skills; and years of experience):

• Must be able to obtain a food handlers card.
• One year of prior experience is preferred.
• Ability to read and comprehend simple instructions, short correspondence, and memos.
• Ability to write simple correspondence.
• Must pass and remain in compliance with Coquille Gaming Commission background check and drug free work place policies

PHYSICAL DEMANDS/WORK ENVIRONMENT (the physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this position. Reasonable accommodations will be considered to enable individuals with disabilities to perform the essential job functions):

Ability to work weekends, holidays and evening hours as business demands. While performing duties of this position, employee is required to stand for extended periods, and frequently walk, and use hands to; finger, handle, or feel objects, tools, or controls. Ability to lift up to 50 lbs. frequently. Ability to occasionally lift up to 80 lbs. Ability to manage stress appropriately, make decisions under pressure, manage anger, fear, hostility and violence of others appropriately. The casino work environment may expose you to second hand smoke on a regular basis.
