Key Responsibilities

Food Preparation & Cooking

Station Setup & Mise en Place:

  • Prepare ingredients, sauces, and garnishes ahead of service, ensuring your station is fully stocked and organized.

  • Ensure that all food items are prepped according to Doanburi's recipes and presentation standards.

Cooking & Plating:

  • Cook menu items to order, maintaining consistency in quality, taste, and presentation.

  • Plate dishes in accordance with the restaurant's standards and specifications.

Specialized Cooking:

  • Follow recipes for signature dishes, including sushi and other Japanese cuisine specialties.

  • Adapt and modify recipes as needed for special dietary requirements or allergies, coordinating closely with servers and management.

Operational Duties

Food Safety & Sanitation:

  • Maintain strict adherence to food safety and sanitation guidelines during food prep, cooking, and service.

  • Ensure proper storage and rotation of ingredients to minimize waste and maintain freshness.

Equipment & Station Maintenance:

  • Keep your cooking station clean and organized throughout your shift.

  • Regularly check equipment and report any malfunctions or maintenance needs to the Sous Chef or Head Chef.

Inventory & Stock Management:

  • Monitor ingredient levels and notify management when supplies are low or nearing expiration.

  • Assist with receiving, unpacking, and storing deliveries while adhering to safety protocols.

Team Collaboration & Communication

Kitchen Teamwork:

  • Work closely with fellow cooks, kitchen porters, and the management team to ensure seamless operations during service.

  • Communicate effectively during high-volume periods to prioritize orders and adjust to guest needs.

Coordination with FOH:

  • Collaborate with front-of-house staff to ensure that orders are delivered accurately and on time.

  • Accommodate special requests or modifications as directed by servers or management.

Administrative & Reporting Duties

Shift Reporting:

  • Complete any required shift reports and communicate key information regarding inventory, prep status, or issues encountered during service.

Adherence to Procedures:

  • Follow standardized recipes, portion controls, and quality guidelines to maintain consistency across all dishes.

  • Participate in regular briefings and training sessions to stay current on new menu items and service protocols.

Qualifications

Experience:

  • Prior experience as a line cook or in a similar role within a fast-paced kitchen environment is preferred.

  • Experience with Japanese cuisine and sushi preparation is a plus.

Skills:

  • Strong culinary skills with a focus on speed, efficiency, and consistency.

  • Excellent knowledge of kitchen equipment, food safety standards, and sanitation procedures.

  • Ability to work effectively under pressure, multitask, and maintain attention to detail.

Physical Requirements:

  • Ability to stand for long periods, lift heavy items (up to 25 pounds), and work in a hot kitchen environment.

  • Must be able to work flexible shifts, including evenings, weekends, and holidays.
