Title of Job: Prep Cook

Reports to: EXECUTIVE CHEF

Division: Lombardo's

DAILY & WEEKLY DUTIES: Prepares food & cooks all food for banquets according to Lombardo's recipes. Maintain daily sanitation standards of kitchen, walk-ins & food storage shelves. Insures quality of food, adheres to recipes and procedures. Rotates stock. Assures all deliveries are complete, in absence of receiver. If and when needed assists in salad preparations. Organizes all refrigerators at the end of the shift. Utilize and maintain company issued uniform standards. Team work attitude

COOK 1
• Prepares and stages all items for events including but not limited to; proteins, starch, veg., sauce, garnish and hors d'oeuvres.
• Oversee salad prep and dishwashers in the absence of a supervisor.
• Review production sheets and orders; communicate short ages, concerns and questions to Sous Chef/Executive Chef.
• Update and review production sheets, line-up carts for accuracy and readiness.
• Assist in delegating tasks to prep cooks in absence of management.
• Check out with Sous Chef or Executive Chef prior to leaving at the end of shift.
• Assist in planning and preparing nutritional, creative and delicious meals for associates.
• Evaluate product supplies, identify items to rotate and prevent loss.
• Assist in food cost management strategies.

COOK 2/3
• Hors d'oeuvres prep service - 15 minutes prior to start
• Assist Cook 1 with general preparations
• Review production sheets, line-up carts for accuracy and readiness.
• Clean, organize walk-ins and prep areas as needed
• Follow procedures for equipment, usage and cleaning.

OTHER SIGNIFICANT DUTIES: Interacts in a positive manner with other departments (i.e. waitstaff, room captains, management) Performs other miscellaneous duties as instructed by management
