Works Closely With: Sales Managers, Restaurant Manager, Controller, and Facilities Manager

Supervises: Kitchen Managers and Supervisors

Position Summary

The Chef de Cuisine supports the Executive Chef in all aspects of kitchen operations, with a primary focus on line, pantry, and dish areas. This position plays a key leadership role in maintaining culinary standards, fostering a positive and professional team culture, and delivering an outstanding dining experience consistent with Schuler's mission and values.

Key Responsibilities

Leadership & Management

  • Assist the Executive Chef in the daily management of kitchen operations, ensuring efficiency, consistency, and teamwork across all stations.
  • In the absence of the Executive Chef, assume full management responsibilities for the kitchen, maintaining a strong presence and upholding Schuler's culture of high morale and accountability.
  • Lead, train, and mentor kitchen staff at all levels on proper cooking methods, portion control, plating standards, and food safety practices.
  • Manage kitchen labor to meet operational and financial goals, including monitoring and controlling overtime.

Culinary Excellence

  • Oversee all aspects of food preparation and presentation for restaurant service, banquets, and catering events.
  • Ensure production lists and order recommendations are completed accurately and submitted in a timely manner.
  • Maintain the highest standards of food quality, freshness, and consistency, particularly in line and pantry production.
  • Conduct line checks to verify proper food holding temperatures, storage, and cooling procedures.

Financial & Operational Oversight

  • Support the Executive Chef in achieving and exceeding budgeted profitability goals.
  • Maintain budgeted food costs relative to revenue while minimizing waste and ensuring efficiency.
  • Ensure compliance with all federal, state, local, and company food safety and sanitation regulations.

Team Relations & Administration

  • Foster effective communication and collaboration with the Executive Chef, Front-of-House management, and all team members.
  • Act as the recognized kitchen leader in the Executive Chef's absence, setting the tone for professionalism and teamwork.
  • Participate in performance reviews and disciplinary processes in accordance with Human Resources policies, ensuring proper documentation when required.
  • Attend required meetings as assigned by the Executive Chef and General Manager.

Culinary Planning & Creativity

  • Serve as a creative partner to the Executive Chef in developing weekly features and innovative menu items that reflect Schuler's standards and seasonal inspirations.
  • Contribute ideas and feedback to menu development, food presentation, and special culinary events.

Banquet Production & Oversight

  • Assist in the planning, production, and execution of banquet and catering operations to ensure timely service and consistent quality.
  • Work closely with the Events and Front-of-House teams to coordinate logistics, menus, and staffing for all banquet functions.

Kitchen Organization & Maintenance

  • Oversee cooler and storage organization to ensure proper rotation (FIFO), cleanliness, and accurate labeling of all items.
  • Monitor inventory levels and collaborate with the Executive Chef on order needs and cost-control strategies.
