We're looking for a passionate and experienced Kitchen Manager to lead our back-of-house operations and help us deliver the perfect balance of creativity, quality, and consistency.
Summary of Position :
The Kitchen Manager is responsible for overseeing all back-of-house (BOH) operations to ensure smooth, efficient performance and consistent food quality. The role blends leadership, hands-on kitchen work, inventory control, staff training, and coordination with front-of-house (FOH) teams to deliver a superior guest experience.
Duties & Responsibilities:
Leadership & Operations
- Supervise and support all kitchen operations, including prep, cooking, and cleaning.
- Ensure consistent execution of Rotolo's recipes, portioning, and presentation standards.
- Work closely with the General Manager and FOH leadership to deliver an exceptional guest experience.
Team Development
- Recruit, train, and coach kitchen staff to achieve operational excellence.
- Create and manage weekly BOH schedules, ensuring proper coverage and labor balance.
- Conduct performance evaluations, provide feedback, and foster a positive work environment.
Inventory & Cost Control
- Manage inventory levels and place orders for food, supplies, and kitchen essentials.
- Monitor food costs, portion control, and minimize waste.
- Maintain accurate records of deliveries, invoices, and vendor relationships.
Food Safety & Sanitation
- Uphold all food safety and sanitation standards in compliance with local and state regulations.
- Maintain cleanliness and organization of all kitchen areas, equipment, and storage.
- Lead by example during health inspections and ensure compliance at all times.
Administration & Communication
- Track key kitchen metrics (labor, food cost, waste) and report to management.
- Collaborate with FOH and management to improve efficiency and guest satisfaction.
- Support special events, catering, and seasonal menu rollouts as needed.
Qualifications
- Thorough understanding of food safety, kitchen operations, and inventory management
- Ability to thrive in a fast-paced, high-volume kitchen environment.
- Minimum 1–2 years of experience as a Kitchen Manager OR Lead Cook (restaurant experience required).
- Possess basic phone skills and have the ability to understand the Point of Sale system in order to take phone orders from customers.
- Be able to work in a standing position for long periods of time.
- Be able to safely lift and easily maneuver up to 50 lbs of product.
