Our Entertainment Centers offer activities like bowling, laser tag, ninja courses, sports simulators, arcades and more along with a full restaurant and bar. We are a fast-growing company with continued expansion plans and are looking for someone to help lead our kitchen and ensure the highest quality of food for our guests.
POSITION SUMMARY:
The AKM (Assistant Kitchen Manager) will help oversee the operations of our kitchen staff. The successful candidate will have culinary and management experience. We're looking for a creative, motivating professional who doesn't mind contributing to prep work or delivering food when necessary, but who won't be afraid to delegate. You will report to the KM (Kitchen Manager) and GM (General Manager) and have the opportunity to hire and train staff. The job requires approximately 50 hours per week with some nights and weekends each month.
DUTIES:
- Assist in ordering supplies, food and ingredients based on rapidly shifting demand
- Assist in Hiring and training kitchen staff in specific stations, and cross-train as necessary
- Assist in creating schedules for kitchen staff to ensure there are always enough workers to meet the demand, particularly for the lunch and dinner rush
- Maintain inventory levels and conduct full monthly inventory
- Schedule and oversee necessary maintenance and repairs on kitchen appliances
- Assist the KM with menu changes and adjustments
- Respond personally to guest questions and complaints
SKILLS:
- 2+ years' restaurant management/Culinary experience
- Ability to work well under pressure and in a fast-paced environment
- Excellent written and oral communication skills
- Capable of conducting and assessing restaurant inventory
- Willing to work a flexible schedule
- Experience with delegating tasks and maintaining fast speed of service

REPORTING RELATIONSHIPS:

RESPONSIBILITIES:
Financial/Operations:
· Assist in managing all aspects of culinary operations: staffing, scheduling, repair and maintenance and quality of product.
· Accountable for managing culinary financial responsibilities, including food cost, labor costs and inventory within budget
· Assist in overseeing ordering of all food items
· Work closely with General Manager, Kitchen Manager, and Operations to ensure consistent standards and quality
· Enforce Surge Management LLC standards and specifications related to food preparation and food handling on a daily basis
· Responsible for compliance with all environment and health board requirements related to the preparation and service of food and beverage.
· Maintain safety and sanitation standards
· Ensure proper working condition of all kitchen equipment
· Ensure banquets, buffets and specials are consistent with Surge Management LLC standards and specifications
· Ensure site reviews are within acceptable standards
Guest Service:
· Execution of all menu categories and specific recipes for each menu item including timing, quality, temperature, portion, presentation, etc.
· Ensure the highest level of quality product and service.
· Maintain the highest quality menu strategy to be used in the restaurant on an ongoing basis.
· Responsible for a quality guest experience.
· Empower staff to deliver exceptional service.
· Ensure guest surveys are within acceptable standards
Human Resources:
· Responsible for the development of culinary staff
· Responsible to provide direct and honest feedback to staff regarding individual performance
· Manages staff training and employee relations
· Assures the staff morale is maintained at the highest level
· Takes an active part in the recruitment and retention of staff.
REQUIRED QUALIFICATIONS:
· Minimum of two years proven track record as Manager for a high volume full-service or casual dining/quality dining restaurant.
· Creative skills in food preparation and presentation for both banquet and high-volume units
· Proven leadership skills with the ability to motivate and manage all levels of staff
· Past experience in managing P&L responsibilities
· Financial analysis and assessment skills
· Strong written and verbal sills
· Organizational skills
· Ability to create and maintain a team-oriented environment
· Passion for creative food design
· Basic computer skills
DESIRED QUALIFICATIONS
· HACCP or Serv-Safe (or similar) food safety training and certificate
