Forepaughs is hiring experienced Pastry Cooks

Pastry & Dessert Production

  • Prepare and execute a wide range of pastry items, including:
    • Plated desserts for à la carte and tasting menus
  • Cakes, tarts, entremets, and petits fours
  • Custards, mousses, creams, and sauces
  • Breads, laminated doughs, and viennoiserie (as applicable)
  • Ice creams, sorbets, and frozen components
  • Follow precise recipes, techniques, and plating standards as developed by the pastry leadership
  • Execute service desserts with accuracy, consistency, and proper timing during service
  • Assist with menu development, seasonal changes, and new dessert concepts when requested

Service Execution

  • Maintain composure and precision during high-volume or tasting-menu service
  • Plate desserts cleanly and artistically according to established standards
  • Coordinate closely with the kitchen and front-of-house teams to ensure proper pacing and guest satisfaction
  • Ensure all desserts leave the kitchen at peak quality, temperature, and presentation

Prep, Organization & Sanitation

  • Perform daily prep efficiently to meet service and production needs
  • Properly label, date, rotate, and store all pastry products (FIFO)
  • Maintain a clean, organized, and food-safe pastry station at all times
  • Adhere strictly to food safety, sanitation, and allergen protocols
  • Accurately complete production lists, prep sheets, and temperature logs

Requirements:

  • Strong foundation in classic and modern pastry techniques
  • Understanding of baking science, ratios, and temperature control
  • High level of attention to detail and consistency
  • Strong time management and organizational skills
  • Ability to take direction, accept feedback, and continuously improve
  • Creativity balanced with discipline and execution
  • Excellent teamwork and communication skills
  • Culinary degree or formal pastry training preferred
    1- -3 years of professional pastry or baking experience; fine dining experience strongly preferred
  • Knowledge of food safety and sanitation standards
  • Food Handler or ServSafe certification (or ability to obtain)
  • Ability to stand for extended periods
  • Ability to lift up to 50 lbs
  • Comfortable working early mornings, nights, weekends, and holidays
  • Fast-paced, detail-driven kitchen environment with high expectations
