Position Overview

The Pastry Assistant supports the Pastry Chef in daily production for both member dining and banquet operations. As part of a two-person pastry team, this role requires strong communication, organization, and an ability to execute with consistency and precision. The ideal candidate will possess pastry experience or formal training and be capable of managing day-to-day production while maintaining the club's high standards of quality, cleanliness, and presentation.

Primary Responsibilities

Production & Execution

• Assist the Pastry Chef in preparing, baking, and decorating a variety of pastries, breads, and plated desserts for à la carte and banquet service.
• Follow established recipes, methods, and plating standards to ensure product consistency and quality.
• Measure, mix, and bake ingredients with attention to detail, monitoring time and temperature accurately.
• Maintain daily par levels for 3–4 seasonal dessert specials and assist with updates during menu changes.

Organization & Cleanliness

• Maintain cleanliness and organization in the bakeshop and shared kitchen spaces.
• Wash and sanitize all tools, surfaces, and equipment daily.
• Properly label and store products; update labels every five days to ensure freshness.

Inventory & Communication

• Monitor ingredient levels, communicate shortages, and assist with inventory control.
• Record needed items on the pastry order sheet and verbally update the Pastry Chef.
• Assist with receiving and organizing deliveries in dry and cold storage.

Collaboration & Professional Conduct

• Communicate directly with the Pastry Chef and follow established chain of command.
• Support special club events with custom or themed desserts (including specialty cakes).
• Uphold food safety and sanitation standards at all times.
• Wear full uniform: Poinsett Club hat, assigned chef coat or shirt, black/checkered pants, and non-slip shoes.

Additional Duties

• Execute daily/weekly pastry tasks such as baking cookies, portioning doughs, assembling pies, and plating desserts.
• Remain adaptable, eager to learn, and willing to contribute creatively as the department evolves.
• Complete ServSafe certification or similar training if required.

Full-time, Monday–Friday (occasional weekends/holidays). Assist the Pastry Chef in producing high-quality desserts for both à la carte and banquet service in a private club environment. Must be organized, team-oriented, and able to follow precise recipes and methods.

Requirements: pastry experience or culinary education preferred; strong communication and work ethic required.
