ESSENTIAL FUNCTIONS:

1. Cuts, trims and bones meats prior to cooking.

  1. Washes, peels, cuts and shreds vegetables and fruits to prepare then for use.

  2. Butchers chicken, fish, and shellfish.

  3. Measures and mixes ingredients according to recipe to prepare soups, salads, gravies, desserts, sauces, casseroles, flautas, ect.

  4. Ability to determine quality of food by looking, smelling, and tasting.

  5. Assists Cook to estimate food requirements and procures food from storage and/or freezer.

  6. Cleans work area and equipment using broom, mop, sponge, cleaning solution, or other appropriate materials.

  7. Cleans and sanitizes all food preparation equipment and ensures that is kept in safe and operation condition.

  8. Ability to use standard food preparation utensils such as knives, spoons, tongs and whips.

  9. Ability to operate power driven kitchen kitchen equipment such as a meat slicer or mixer.

  10. Move objects between 20-50 pounds short distance with or without assistance.

  11. Assists other kitchen staff as needed.

  12. Responsible for maintaining a clean and sanitary area all the times in full accordance with State Health regulations.

14.Other duties as assigned by Food & Beverage Director and/or CEO.

KNOWLEDGE AND SKILLS:

Knowledgeable on methods, materials and practice of volume food preparation. Well versed on sanitary methods used in food preparation and related activities.

MINIMUM REQUIREMENTS:

High School Diploma or GED preferred. Bi-lingual English/ Spanish preferred. Must be culturally sensitive to minority population especially Native Americans; must be able to successfully pass a post-offer drug screen and criminal history background check. Must be able to obtain a Food Handlers card within 30 days of employment or present upon hire. Must possess excellent organizational skills for dealing with diverse duties and staff. Must be able to work well and safely under pressure. Ability to handle multi-tasks and prioritize accordingly.

PHYSICAL REQUIREMENTS:

While performing the duties of this job, the Employee is regularly required to use manual and finger dexterity, handle, or fell objects, reach with hands and arms, and talk or hear. The Employee is frequently required to stand and walk. The employee is frequently required to lift up to 25 pounds, and occasionally requires to lift up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.
