Assistant Pastry Chef – Production

Tarallucci e Vino is a growing group of Italian restaurants in NYC with a full scratch pastry
program. All pastries, breads, and desserts are produced at our Union Square location for our
restaurants, café, and expanding events division.
We have a very talented Executive Pastry Chef leading the creative direction — and we are
looking for an Assistant Pastry Chef who brings structure, organization, and smooth production
flow, while also working hands-on in daily production.
If you are a pastry professional who excels at both organization and execution, this role is for you.
What You'll Do:
Own daily production flow to ensure everything is produced smoothly and on schedule.
Actively participate in production: mixing, baking, assembling, portioning, and packaging.
Keep production numbers accurate and updated across all par sheets and prep lists.
Fulfill internal orders (restaurants + café + events) consistently and on time.
Help organize weekly production schedules and communicate daily priorities.
Work closely with the Executive Pastry Chef to translate creative ideas into organized
production plans.
Support and mentor junior pastry cooks with clear expectations and structured workflows.
Maintain a clean, efficient workspace and uphold all food-safety standards.
What We're Looking For:
2–3+ years of pastry experience in a professional kitchen (NYC experience preferred).
Someone naturally organized, structured, and detail-oriented.
A person who can both manage production and execute production.
Strong ability to scale recipes, track quantities, and meet deadlines.
Calm under pressure and able to keep the team focused.
Strong pastry fundamentals: doughs, creams, fillings, lamination, decoration, plating.
Reliable, punctual, and consistent.
English required; Spanish a plus.
