The Role
We're seeking an experienced culinary professional to lead our Deli department and deliver exceptional food prepared foods that showcase local ingredients and sustainable practices. The Deli Manager will oversee all deli operations including food prep, grab-n-go, our in-store cafe, and service counter while leading a team in food preparation and service, ensure food safety compliance, building relationships with local producers. Your leadership will ensure our offerings reflect our commitment to seasonal ingredients, sustainable practices, and place-based cuisine.
Key Responsibilities
Departmental Operations
- Direct daily operations including food prep, value-add products, grab-n-go, and service counter
- Master POS system for transactions, inventory tracking, and reporting
- Maintain food safety standards and ensure health code compliance and certifications
- Manage production schedules to minimize waste while ensuring product availability
- Coordinate equipment maintenance and optimize kitchen workflow
Team Development
- Hire, train, and supervise deli staff in food preparation, safety protocols, and customer service
- Provide coaching, performance evaluations, and disciplinary action when needed
- Create schedules balancing labor budgets with service excellence
- Foster a collaborative kitchen culture valuing learning and teamwork
- Develop staff knowledge in natural foods, local ingredients, and quality sourcing
Menu & Product Development
- Design seasonal menus featuring local, organic, and sustainable ingredients
- Work with VP of Place Based Foods to build relationships with local producers and artisan food makers
- Create recipes highlighting regional flavors and ingredient stories
- Ensure consistent quality, portion control, and presentation standards
- Stay current with place-based food trends and plant-forward cuisine
Financial Management
- Achieve sales, food cost, margin, and labor goals within budget
- Manage ordering and inventory focusing on par levels and spoilage reduction
- Price products competitively while maintaining quality and margin targets
- Review sales reports and implement strategies to achieve goals
- Collaborate on annual budgets and promotional planning
Community & Customer Experience
- Provide exceptional service that educates and connects people to their food sources
- Respond to customer feedback and dietary needs with values-aligned solutions
- Coordinate sampling events, cooking demonstrations, and educational programs
- Manage donations program for prepared foods with community organizations
- Create an inviting atmosphere that serves as a community gathering place
This role reports to the General Manager.
Qualifications:
Experience
- Minimum 3 years deli or food service management experience, preferably in natural foods or from-scratch kitchens
Skills
- Culinary skills with knowledge of diverse cooking techniques and dietary accommodations
- Financial acumen with food costing, labor management, and budget analysis
- Excellent communication and team leadership abilities
- Creative problem-solving with adaptability to customer needs and operational challenges
- Computer proficiency including POS systems, spreadsheets, and ordering platforms
Physical Requirements
- Lift and move up to 40 pounds regularly
- Extended periods on your feet in kitchen environment
- Ability to work in varying temperatures (hot kitchen, walk-in coolers)
- Manual dexterity for food preparation, knife work, and equipment operation
- Ability to stand, reach, bend, and move throughout shift
- Strong background in food safety, HACCP protocols, and health code compliance
- Experience with menu development, recipe costing, and inventory management
- ServSafe Manager Certification (or ability to obtain within 30 days of hire)
- Demonstrated commitment to natural foods, local sourcing, and sustainable practices
