The Stewarding Supervisor is the link between Culinary, Front of House and Banquet Departments. This position will ensure that small ware and hotel inventories are kept to par and company standards. The Stewarding Supervisor delegates tasks to Stewards to ensure the culinary team and front of house have clean tools and supplies to work with daily. The Stewarding Supervisor must ensure all kitchens are organized and everything is cleaned to company standards.
Job Description
- Key Job Functions
- Supervise the work of stewards to ensure all areas of the back of the house are clean and organized.
- Daily health inspection of all dish machines including temperature and chemical levels.
- Daily inspections of all outlets to ensure outlets are clean and organized to company standards.
- Chemical outlet tracking, ensure all areas have the par of chemicals assigned.
- Duties include washing dishes, scouring pans, cleaning up workspaces and mopping floors.
- Make sure that all of the tools and utensils needed are washed and ready to go.
- Transport food and supplies for events from kitchens and storerooms to banquet events.
- Responsible for the overall cleanliness of the back of the house for the entire hotel.
- Comply with the hotel's standards.
- Sweeps and mops floor once every hour as needed.
- Scrapes food from dirty dishes and washes them by hand or places them in racks or on conveyor to dishwashing machine. Washes pots, pans and trays by hand. Runs glasses through dish machine twice. Return all china, silverware, glassware, pots, pans and trays to their proper storage areas.
- Clean worktables, walls, walk-in refrigerators, buffet ware, storage areas and meat blocks.
- Separates and removes trash and garbage and places it in designated containers; steam-cleans or hoses-out garbage cans.
- Sorts trash and recyclable items and dispose each item in the correct dumpster.
- Polishes silver, using burnishing-machine tumbler, chemical dip, buffing wheel, and hand cloth, if required.
- Transfers supplies and equipment between storage and work areas by hand or by use of hand cart.
- Prepare and place clean equipment (china, glassware, and silverware) for all events and functions.
- Puts away all clean utensils; puts away and rotates stock in designated areas.
- Maintain all dish machines to ensure continued durability and proper use.
- Follow guidelines to check out all stewards to ensure each station or dish room has been closed to proper standards.
- Attend all stewarding meetings.
- Communicate directly with the Executive Chef to ensure all tasks are complete.
- Kitchen Supervisors should be able to train all new associates on every job duty listed above.
