Job Description

The objective of all positions is to effectively provide the services personally, or to immediately refer requests to the appropriate department manager. The following is a summary of the major responsibilities of the position

Responsibilities

Assist in the operation planning process of events to create realistic action plans through event orders, manifests, and direct client interaction. Maintain daily concessions operations both FOH and BOH during event and non-event days, including opening/closing of concessions operations, inventory management, and equipment management. Assist Banquet Manager in the performance of duties including scheduling, event orders resumes, banquet tickets, daily reports, associate reviews and attendance history Opening and closing the day to day banquet operations. Control all of the aspects in the execution of banquet functions. In the absence of the Banquet Manager, direct, control, and organize staffs and maintain goods service. Assist in keeping necessary inventories on equipment, food and beverage items. Control payroll by using staffing guides and punch detail reports. Coordinate functions with Service Staff. Coordinate services required by Stewarding Department. Ensures appropriate setup of functions. Provide Banquet management with day-to-day reports on groups and employees. Ability to understand and complete all paperwork such as consumption reports, cash bar procedures, safety checklist reports Consistent maintenance of/and refinement of service standards. Assure consistent maintenance of corporate Food and Beverage systems and control procedures in all "front of house operations". Instruct and direct associates, agency, and volunteer group members on policies, procedures, and duties. Submit all purchase requests for department to Concessions and Beverage Manager prior to submittal. Consistent maintenance of environments of all concessions, bars, and related areas.

Qualifications

 Assure consistent maintenance of corporate Food and Beverage systems and control procedures in all "front of house operations".  Instruct and direct associates, agency, and volunteer group members on policies, procedures, and duties. Submit all purchase requests for department to Concessions and Beverage Manager prior to submittal. Consistent maintenance of environments of all concessions, bars, and related areas. Monitor department uniforms and forecast uniform consumption and purchase schedule. Assists with end of month inventories and coordinates with other department heads to have a consistent yet financially responsible inventory level. Work with department managers with routine review of inventory control sheets to verify proper portion costs and that food and beverage quality standards are met. Oversee all equipment and storage areas to ensure proper function and cleanliness. Oversee the setup, execution, and breakdown of retail areas and bars to include the placement of equipment, product, and signage according to event order specifications to corporate, Trinity F&B, and city of Fort Worth Maintain communication with all department heads during the course of every function to ensure timely execution of events, quality of service, and adherence to all applicable federal, state, local safety and health regulations. Partner with other departments to provide additional event support as needed. May be required to supervise Catered Events, or associates from other departments. Adherence to all accounting procedures and product controls, including accurate and timely reporting of consumption sheets, all applicable stand sheets, purchase orders, temporary labor time sheets, ensuring 100% compliance according to corporate audit procedures. Assistance in departments scheduling, forecasting, and budgeting for all concessions and bar events. Uphold and enforce Power of One standards, through daily reminders, training, observation, and follow up. Attends daily and weekly food and beverage meetings. Know and adhere to all TABC liquor laws. Perform other duties as needed, such as cleaning up unexpected spills, moving equipment to different locations in the Facility, special guest requests, or assist with other department functions when necessary
