About the location:

Since opening in 1962, The Ocean Club, A Four Seasons Resort, Bahamas has been a playground for celebrities and discerning travellers set along an 8-kilometre (5-mile) stretch of natural, white-sand beach on Paradise Island. Connect with Bahamian beauty in an enclave of remarkable seclusion, where intimate low-rise buildings are immersed in 14 hectares (35 acres) of Versailles-inspired lawns and gardens. The Role of the Sous Chef

The Sous Chef oversees and coordinates culinary operations, ensuring the seamless preparation and cooking of food items by supervising a team of cooks and kitchen staff. The Sous Chef's responsibilities encompass a wide range of duties aimed at maintaining the highest standards of culinary excellence. In addition to managing the day-to-day activities of the kitchen, the Sous Chef plays a pivotal role in ensuring the smooth execution of menu items, maintaining consistency in taste and presentation. In the absence of the Executive Sous Chef, the Sous Chef assumes full responsibility for the kitchen's operations, demonstrating leadership skills and culinary expertise. These duties include delegating tasks, monitoring food preparation processes, and upholding strict standards of quality and hygiene. The Sous Chef also collaborates closely with the culinary team to innovate and refine dishes, ensuring that guests' expectations are consistently exceeded.

Key Functions

Establishes menu forecasts based on house counts or business forecast, previous experience, date, etc. 

Posts the menu forecast for all kitchen employees to view

Assist in the planning and development of recipes, and ensure the correct preparation and presentation of a consistent level for all food items prepared through production and demonstration

Ensures methods of cooking, garnishing and size portions are as prescribed

Verify that quality standards, departmental rules, policies and procedures are maintained by kitchen employees

May be required to prepare special diets according to specific guidelines

Ensure that sanitation standards as set forth by Four Seasons and local regulations are in compliance

Monitors and maintains cleanliness, sanitation and organization of assigned work areas and reach-in coolers

Preferred Qualifications And Skills

2-4 years previous hospitality Culinary expertise preferred

Excellent written and verbal communication skills

Strong attention to detail

Excellent leadership skills and be able to manage and motivate a team of chefs, cooks, and other kitchen staff

Creativity, as a hotel restaurant Sous Chef should have a creative flair and be able to come up with new and exciting dishes that keep customers coming back for more
