A one-in-a-million job for a one-in-a-million chef.
Trust is a culinary theater where three chefs prepare a 12-course meal for 18 guests sitting along a bar surrounding the kitchen. A sommelier pours paired wines with each course. Yelp listed Trust as one of the top 100 places to eat in America in 2023. The restaurant is open Tuesday through Saturday, running eight or nine services per week. The theme (and therefore the menu) changes every night or two, giving the Chef great opportunities to show his range of talents and creativity in utilizing the finest locally sourced ingredients, which are supplemented with exciting products from around the world like A-5 wagyu beef, Ibérica de Bellota pork and white truffles.
Few chefs can handle this job. It requires a broad range of food knowledge and cooking skills, a highly creative and inventive mind, intense passion, charisma and a desire to engage with every guest. You've got to lead a team of three chefs in prepping and running all services, manage all purchasing, menu planning and execution, and manage a sommelier who also acts as host and reservation concierge. Trust is a sister restaurant of Jason Quinn's Detention Restaurant (fka Playground), to which it is physically connected, and you would have support from Jason and his team for management of the reservation system (Tock), guest communications, cross-utilization of resources, including shared food staples, equipment and staffing.
