GENERAL REQUIREMENTS

  • Must be able to work in a fast paced, high energy, and physically demanding environment

  • Occasionally work up to 40+ hours per week, depending on the needs of the property

  • Must be able to spend a minimum of 90% of working time standing

  • The ability to walk, bend, kneel, handle, reach, squat, crawl, climb, stoop, and other related physical activities

  • Comfortable working for long periods of time in walk-in coolers and freezers.

  • The ability to lift up to 50 pounds as needed

  • Able to read and follow written/oral instructions

  • The ability to work weekends, evenings, and some holidays, as needed

  • Safety and sanitation fundamentals. Practice safe and effective methods of work, use of equipment, cleaners and tools

  • ServSafe Certification required


Essential Duties & Responsibilities:

  • Prepares a variety of meats, seafood, poultry, vegetables, and other food items for cooking in broilers, ovens, grills, fryers, and a variety of other kitchen equipment.

  • Assumes 100% responsibility for quality of products served

  • Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies, and procedures.

  • Stocks and maintains sufficient levels of food products at line stations to assure a smooth service period.

  • Portions food products prior to cooking according to standard portion sizes and recipe specifications.

  • Maintains a clean and sanitary workstation area including tables, shelves, grills, broilers, fryers, freezers, sauté burners, convection oven, flat top range and refrigeration equipment.

  • Prepares items for broiling, grilling, frying, sautéing or other cooking methods by portioning, seasoning and/or marinating.

  • Follows proper plate presentation and garnish set up for all dishes.

  • Handles, stores and rotates all products properly.

  • Assists in food prep assignments during off-peak periods as needed.

  • Closes the kitchen properly and follows the closing checklist for the kitchen, assisting others in closing the kitchen.

  • Assists in Dishwashing and cleaning needs in and around kitchen as needed

  • Attends all scheduled employee meetings and brings suggestions for improvement.

  • Performs other related duties as assigned by the Executive chef or manager-on-duty.

  • Monitors inventory in prep and line area. Informs supervisor of low inventory as soon as possible.

  • When prepped inventory runs low, look for missing items carefully to ensure the kitchen has run out, then inform the supervisor.

  • And any additional tasks that you are asked to perform.

  • Utilize required checklists every day.

  • Be able to communicate clearly and effectively.

  • Possess strong organizational and multitasking skills.
