Position Title: DESM Meat Cutter

Department: Retail

Employment Classification: Non-Exempt

Position Summary/General Description:

A Meat Cutter uses knives, saws, grinders and other carving tools to cut, trim and prepare meat for sale to customers in a safe and efficient manner.

Essential Duties & Responsibilities:

  • Break down large pieces of meat into merchandisable cuts (e.g., pork chops, steaks, mutton, tamale meat) while minimizing waste.
  • Concentrate on the task at hand when working with large knives, grinders and other dangerous objects.
  • Use of good hand-eye coordination when handling knives and slippery pieces of meat.
  • Price meat on meat scale.
  • Identify and track how long meat can be displayed before it must be thrown away.
  • Prepare, package and display meats.
  • Help customers with large or special orders (e.g., cut meat to the weight requested).
  • Take orders, cut, weigh, wrap and label meats for customers.
  • Keep track of daily meat sales.
  • Ensure meat counter is always stocked.
  • Maintain knowledge of meat market.
  • Clean shelves and empty trash.
  • Maintain familiarity and ensure compliance with health and safety regulations.
  • Build relationships and loyalty with guests through sincere and meaningful interactions (e.g., learn guests’ names and preferences; connect with them individually and professionally; smile; make eye contact and verbally greet and provide fast and friendly service to guests).
  • Be a team player (e.g., work toward team goals and foster a collaborative and positive work environment; put the team first; assist coworkers; treat all coworkers with kindness, courtesy and respect; never engage in negativity; maintain openness to coaching, learning and improving; receptive to change and willingness to embrace challenges with team-spirit).
  • At all times maintain a courteous, positive and professional working relationship with all LDC personnel and the general public (e.g., coworkers, clients and vendors).
  • Work under pressure; maintain regular and punctual attendance including working odd and unusual hours, weekends and holidays.
  • Perform additional duties and responsibilities as necessary or assigned.

Education & Experience:

  • High School Diploma or GED certificate preferred.
  • Relevant work experience preferred.
  • One (1) to three (3) year of relevant work experience required.
  • Must have not less than one year experience as a meat cutter in a retail grocery store and with equipment settings to cut specific cuts of meat (e.g., pork chops, steaks, mutton, and tamale meat).

Licensing & Certification:

  • None.

Computer Equipment, Software, Machinery:

  • Proficient in basic computer skills (e.g., Word, Excel, PowerPoint, Outlook).
  • Use knives.
  • Operate a saw, grinder, scale, tenderizer, meat scale and a slicer.

Essential Physical Requirements:

  • Requires the ability to balance/climb, bend, crouch/stoop, hear, stand, talk, turn/twist and walk 51-100% of the time.
  • Requires the ability to crawl, kneel, and reach overhead 25-50% of the time.
  • Requires the ability to sit 1-24% of the time.
  • Requires the ability to push/pull, carry, lift and slide/transfer 1-50+ lbs. 51-100% of the time.

Essential Mental Demands:

  • Requires the ability to organize, plan, make decisions and read 51%-100% of the time.
  • Requires the ability to solve problems, and interpret data 25%-50% of the time.
  • Requires the ability to write 1-24% of the time.

Work Environment (inside/outside):

  • The job is performed indoors with exposure to cold temperatures, loud noises and in a confined area 51-100% of the time.
  • The job is performed outdoors in high temperatures 1-24% of the time.

Other Requirements:

  • Applicants will be required to pass a pre-employment alcohol/drug screening.
  • Obtain Serv-Safe Certification within ninety days from date of hire and/or transfer.
