Restaurant Supervisor/Sommelier

ESSENTIAL PURPOSE: To assist with the supervision of the restaurant operations and oversee the management of the wine program.
ESSENTIAL DUTIES:
- Responsibilities for this position include daily stocking, cellar work, participating in staff education, tastings, training, inventory, set-up and working the floor during dinner service 5 nights a week
- Work with Restaurant Manager and property GM to develop and maintain the wine list for the restaurant and banquet events. Monitor wine inventory and report deficiencies to Restaurant Manager and property GM who will then order needed supplies. Control wine inventory, variety and cost to maintain adequate supply, quality and profitability.
- Worth with Restaurant Manager to execute monthly inventories to track wine revenues and costs.
- Ensure consistent wine service levels in restaurant through staff education and development.
- Regularly review all food and beverage pricing to identify all yield management revenue opportunities.
- Continually interact with guests to ensure professional, personalized wine service throughout their meal.
- Maintain dining room service style, to ensure professional standards of restaurant operation. To continually interact with guests to ensure professional, personalized service throughout their meal.
- To follow all specified procedures to properly open and close restaurant, including handling bar keys, running Aloha reports and performing all necessary side work.
- Assist with properly documenting Personnel/Payroll transactions, as directed, for processing in the Human Resources department.
- Assist with training, scheduling, supporting, and maintaining highest possible levels of employee morale and department productivity.
- Assist team with taking food and beverage orders from restaurant guests, retrieve the same from the kitchen, and serve to guests in an efficient and professional manner.
- Extend a courteous, friendly and professional greeting to guests as they arrive to thank them as they depart.
- Perform, as directed, all routine opening and closing side duties including folding napkins and stocking and pre-set up of station to facilitate food service.
- To follow all specified procedures to correctly handle all cash, credit and gift certificate transactions, and to correctly use the POS system.
- To maintain the proper care and cleanliness of tableware and serving equipment, handling both to minimize breakage.
- To maintain compliance with local safety and health ordinance regulations.
- Assist with communication with the team via regularly scheduled staff meetings, training and food education.
- To represent and market PlumpJack Inn in a positive and professional manner as requested and continually promote internally and externally by attending special events when requested and building relationships both on and off property.
- To promote and comply with all policies and procedures of PlumpJack.
- To immediately report all suspicious occurrences and hazardous conditions and avoid injury to self and others.
- To maintain the cleanliness and safety of work areas and equipment at all times.
- To attend all mandatory meetings as directed.
- To perform other tasks, including cross-training, as directed.
WORKING CONDITIONS: Constantly moving between indoor and outdoor environments, throughout shift. Indoors: Works in clean, adequately lighted restaurant and office. Exposed to weather conditions while walking to administrative offices. Makes frequent trips to the kitchen, where air may be warm, moist and odorous from cooking foods. Kitchen floor in uneven, and may be slippery from moisture and grease. Extensive property.
PHYSICAL DEMANDS: Stands/walks approximately 80% of shift. Sits at desk or in meetings approximately 20% of shift. Occasionally required to handle and move objects weighing up to 40 lbs. over short distances. Must be able to work well under pressure. Flexibility required to work long, sometimes irregular hours.
