Position Summary
The Sushi Artisan will be tasked with crafting exquisite sushi dishes for our patrons, strictly following Drunken Fish recipes while ensuring a pristine kitchen environment. This role also involves overseeing proper food handling and the careful storage of premium ingredients.
Key Responsibilities
- Collaborate closely with the BKEY and management team
- Guarantee the meticulous preparation, timeliness, freshness, and quality of dishes, adhering to the highest culinary standards
- Follow established recipes, accurately measuring, weighing, and mixing ingredients as outlined in training manuals and prep sheets
- Skillfully prepare raw fish in accordance with best practices
- Prepare sushi rice with precision and consistency
- Monitor inventory levels and manage restocking or preparation tasks efficiently
- Implement hygiene protocols and safe food handling practices
- Handle and store all ingredients and food appropriately
- Maintain a clean and organized kitchen environment
- Present dishes with attention to plating, garnishing, and arrangement
- Assist with additional tasks as needed
- Coordinate food preparation for large catering events, both onsite and offsite
- Support catering and delivery efforts offsite
- Ensure all opening and closing procedures are executed thoroughly
- Maintain a clean, safe, and organized workspace
- Accommodate dietary restrictions and special requests
- Participate in marketing events, such as trade shows and charity functions, as required
- Adhere to all federal, state, and local regulations as outlined by management and the Employee Handbook
Required Skills and Qualifications
- In-depth knowledge of culinary principles and standards
- Exceptional attention to detail and quality
- Maintain professionalism and personal appearance, instilling these values in team members
- Ability to adapt quickly to new tasks and responsibilities, including those related to other So Hospitality Group brands
- Remain composed in high-pressure situations with strong problem-solving skills
- Effectively follow and communicate verbal instructions
- Demonstrate multitasking abilities and strong time management skills
- Thrive in a fast-paced work environment
- Capable of being on your feet and alert for extended periods
- Able to lift up to 50 lbs as necessary
- Must be 18 years or older
- Education: High school diploma or equivalent
- High energy and passion for the culinary industry
- Preferred: 2+ years of professional kitchen experience, with sushi experience being a plus
- Reliable transportation required
- Availability to work a flexible schedule, including on-call, evenings, weekends, and holidays
