Job Title: Artisan Baker

At Route 66 Casino Hotel, we are seeking a skilled Artisan Baker to join our culinary team.

Job Summary:

We are looking for a highly motivated and experienced Artisan Baker to produce high-quality artisan bread and bread products in a fast-paced and high-volume bakery environment.

Key Responsibilities:

  • Prepare food products to precise specifications, adhering to our high standards of quality and presentation.
  • Maintain a clean and organized workspace, including all equipment, to ensure a safe and healthy environment for our guests and team members.
  • Accurately scale and measure ingredients within reasonable tolerances to ensure consistency and quality in our products.
  • Communicate effectively with our Pastry Chef and other team members to ensure smooth production and address any issues or concerns.
  • Prepare pans for the baking of pies, cakes, and scheduled pastries, and load and unload ovens as needed.
  • Fill racks for transportation and storage, and properly label and store back-up products.
  • Communicate production problems to our supervisor and work collaboratively to resolve issues.
  • Prepare various pastries, desserts, confections, and bread as needed for all areas of our casino restaurant outlets.
  • Effectively communicate with management, chefs, and service staff to fulfill and address any issues or needs requested by guests and other employees.
  • Plan, coordinate, and manage multiple work activities simultaneously, prioritizing tasks and managing time efficiently in a fast-paced environment.
  • Communicate clearly and concisely, both orally and in writing, and demonstrate a strong understanding of customer service and hospitality principles and practices.
  • Work knowledgeably with health, safety, and sanitation procedures, and minimize waste while maintaining controls to attain forecasted food cost.
  • Provide assistance to our Pastry Chef with special functions and project preparation and presentation, and perform additional duties and responsibilities as necessary or assigned.

Requirements:

  • High School Diploma or GED preferred.
  • Minimum of two years of relevant work experience as a baker in a fast-paced and high-volume bakery or restaurant.
  • Must be able to mix, shape, and bake artisan breads, including baguettes, ciabatta, wheat, ryes, and other specialty breads.
  • Must possess knowledge of levain and starters in a high-volume atmosphere for the bakery, pastry shop, and casino restaurant outlets.
  • Certification from a culinary school is a plus.
