About the Role

We are seeking a highly skilled and experienced Culinary Expert to join our team at Shore Lodge Whitetail LLC. As a key member of our culinary team, you will be responsible for producing high-quality culinary experiences for our guests.

Key Responsibilities
  • Prepare and execute standardized recipes, as well as develop new recipes to enhance our menu offerings.
  • Assist in sample cooking of new dishes and establish recipe standards to ensure consistency and quality.
  • Ensure attractive placement of food items and show pieces on display, maintaining a high level of presentation and visual appeal.
  • Assist in food requisition to ensure sufficient inventory while minimizing waste, and re-stock items as needed.
  • Supervise the general cleaning and proper handling of food leftovers after meal services, maintaining a clean and safe kitchen environment.
  • Make important decisions relating to par levels for production, ensuring efficient and effective food preparation and service.
  • Set up daily mis-en-place, and maintain a high level of organization and attention to detail.
  • Ability to read banquet BEO and present initiative and ingenuity with minimal supervision, maintaining an optimistic and positive demeanor.
Requirements
  • High School Diploma or equivalent and a 2 Year Culinary Degree or commensurate experience.
  • Ability to read and prepare standardized recipes according to Chef's specifications.
  • Able to organize and prioritize daily par sheets and banquet BEO, maintaining a high level of attention to detail.
  • A working understanding of proper food handling, equipment, and utensils, ensuring a safe and healthy kitchen environment.
  • Ability to cooperatively delegate work properly and in a fair manner, creating smooth operations in the kitchen.
  • Must be able to communicate effectively and professionally with fellow associates, supervisors, managers, and staff, acting as an agent for maintaining a positive kitchen environment.
