The Kitchen Sanitation Specialist is essential in upholding the cleanliness and orderliness of the kitchen environment, ensuring seamless operations for food preparation and service. Your primary duty will be to thoroughly clean dishes, utensils, pots, and pans utilized in food production and service. You will operate in a dynamic setting, assisting kitchen personnel in various tasks to maintain sanitation standards and facilitate efficient kitchen operations. This role is part of the Food Services team and reports directly to the Chef de Cuisine.

Key Responsibilities:

  • Dishwashing: Efficiently wash dishes, pots, pans, and utensils either manually or with dishwashing machinery, ensuring complete cleanliness and sanitation.
  • Equipment Maintenance: Clean and sanitize kitchen appliances such as mixers, slicers, food processors, ovens, and steamers according to established protocols.
  • Organization: Keep the dishwashing area tidy and organized, including the proper storage of clean dishes and utensils.
  • Waste Management: Regularly empty trash bins and ensure waste is disposed of correctly following sanitation guidelines.
  • Kitchen Upkeep: Sweep and mop kitchen floors, walk-in refrigerators, and loading docks daily. Replenish dish soap, hand soap, sanitizer, and paper towel dispensers as needed.
  • Linen Management: Manage linen bins and organize towels and aprons.
  • Support to Kitchen Staff: Assist kitchen staff with food preparation, cleaning, and organization to promote efficient operations.
  • Compliance: Follow health and safety regulations, including the proper handling of cleaning agents, to ensure a safe working environment.
  • Inventory Oversight: Monitor dishwashing supplies and inform management when stock levels are low, assisting with inventory management as necessary.
  • Team Collaboration: Work collaboratively with kitchen staff to foster a positive and productive work atmosphere, contributing to the team's overall success.
  • Attention to Detail: Maintain a keen focus on detail to guarantee thorough cleaning and sanitation of kitchen items.
  • Adaptability: Exhibit flexibility to work in a fast-paced environment and a willingness to assist with various tasks as required.
  • Sanitation Knowledge: Possess a basic understanding of sanitation and safety practices within a food service context.
  • Health and Safety Standards: Adhere to and enforce stringent health and safety protocols, ensuring the kitchen complies with all regulatory requirements.
  • Equipment Care: Responsible for the proper use and upkeep of kitchen equipment, reporting any issues or safety concerns.
  • Communication: Engage with all kitchen staff and the Chef de Cuisine to ensure harmonious kitchen operations.
  • Workstation Maintenance: Maintain a clean and sanitary workstation, organizing and cleaning all kitchen areas, including storage spaces.
  • Physical Requirements: Must be able to stand for extended periods, lift, push, and pull up to 50 lbs, and regularly bend and stoop.
  • Weekend and Holiday Availability: Must be available to work on weekends and holidays as needed.

Additional Qualifications:

  • Experience: Minimum of 1 year in a culinary role; experience in high-volume settings is preferred.
  • Commitment: Dedication to serving the needs of homeless families and individuals.
  • Certification: Food handler certification is required.
  • Education: High school diploma or GED is preferred.
  • Compliance: Drug and TB testing, along with a background check, is required.
