**Job Summary**
Crestline Hotels & Resorts is seeking a highly skilled and experienced Kitchen Supervisor to join our culinary team. As a key member of our kitchen staff, you will be responsible for overseeing the supervision of kitchen staff, preparing and cooking food for our guests, and ensuring that our kitchen operations meet the highest standards of quality and safety.
**Key Responsibilities**
- Assist the chefs in overseeing the supervision of kitchen staff, including setup, cleaning, and break down of kitchen.
- Prepare and cook soups, meats, vegetables, desserts, and other foodstuffs for consumption in our hotel.
- Ensure that breakfast items are cooked to standards and out on time.
- Ensure that room service orders and Club Room orders are completed and on time to hotel standards.
- Assist with training of new hires and less experienced cooks and prep cooks.
- Oversee daily/monthly ASI temperature logs and assist chefs with monthly sanitation audits.
- Break down and store all leftovers of food and equipment that are utilized during your shift.
- Date, identify, and label all food for storage in walk-in, reach-in, freezer, and dry storage.
- Comply with the Clean as You Go work policy and daily sanitation projects and checklists.
- Maintain cleanliness and sanitation of all work surface areas, food service areas, coolers, tables, counters, and all major appliances in the kitchen.
- Cook orders as per ticket from server and handle any special requests of guests in a positive manner.
**Requirements**
- Strong banquet food preparation skills and previous experience in upscale banquet food preparation operations.
- People skills: ability to execute praising, coaching, and counseling procedures in a professional and effective manner.
- Good knowledge and understanding of knife skills, sanitation, and cooking methods and ability to apply them in food production.
- Prior experience in the preparation of food items, including previous line cook experience in an a la carte restaurant required.
- Good knowledge of sanitation codes concerning food storage, cross-contamination, food safety, and danger zones.
- Good knowledge of proper cooking methods (i.e., roasting, sautéing, frying, braising, etc.).
- Good sauce knowledge (i.e., stocks, mother sauces, etc.).
