We are in search of a dedicated pastry artisan to become a vital member of our culinary team.

The pastry artisan will play a crucial role in the development and execution of innovative recipes for seasonal offerings, as well as fulfilling any unique client requests.

The ideal candidate will bring a creative spirit and positive energy that will contribute to the ongoing success of Corcoran Caterers.

Key Responsibilities:

  • Craft and embellish a variety of upscale, scratch-made desserts, including wedding cakes, plated desserts, and more.
  • Invent new and exciting desserts for seasonal menus and plated events.
  • Supervise food production to guarantee quality, safety, and consistency.
  • Assist in the planning and creation of menus.
  • Design innovative plate presentations.
  • Support event execution as needed.
  • Maintain recipe precision and portion control.
  • Ensure cleanliness and organization within the kitchen.
  • Provide assistance to kitchen staff with their production tasks when necessary.

Required Skills:

  • Proficient in communicating, reading, writing, and speaking English effectively.
  • Bi-lingual skills are preferred but not mandatory.
  • Ability to scale recipes for large volumes.
  • Excellent interpersonal and organizational skills to manage time effectively.
  • Self-motivated and proactive.
  • Capable of working in a fast-paced, high-pressure environment while maintaining attention to detail.

Essential Duties & Functions:

  • Oversee the procurement of all items in the pastry department, develop dessert menus, and maintain approved food and labor costs.
  • Train and guide bakery associates on proper techniques for creating visually appealing and professional pastry items.
  • Inspect all finished bakery products to ensure they meet quality and aesthetic standards.
  • Implement strategies to reduce operating costs without compromising the quality of pastries or service.
  • Communicate relevant information and any irregularities in the bake shop operations to the Executive Chef.
  • Research and develop new recipes, as well as create decorative cakes for various events.

Qualifications:

  • Associates degree in Culinary Arts or equivalent training and experience.
  • 4 to 5+ years of experience in a high-volume, fine dining, banquet, or pastry production kitchen, with a minimum of 3+ years in a supervisory role.
  • Demonstrated expertise in pastry techniques.
  • Ability to read and modify written recipes.
  • Current knowledge of food trends and techniques.
  • Physical stamina to stand for extended periods.
  • Clear and effective communication skills.
  • Highly detail-oriented and organized.
  • Efficient problem-solving abilities.
  • Ability to multitask and remain composed in a fast-paced environment.
  • Availability for early morning shifts and weekends.

Preferences:

  • Experience in off-site catering.
  • ServSafe Certification.
