BWW Lawton is seeking a skilled Culinary Specialist to join our team. As a key member of our kitchen staff, you will be responsible for preparing and cooking a variety of dishes to the highest standards of quality and presentation.
Key Responsibilities:- Menu Preparation: Prepare a variety of dishes ranging from meats, seafood, poultry, vegetables, and other items using our established recipes and cooking methods.
- Cooking Techniques: Prepare dishes by cooking in fryers, ovens, grills, and a variety of kitchen equipment, ensuring that all products are cooked to the correct temperature and texture.
- Quality Control: Assume responsibility for the quality of products served, ensuring that all dishes meet our high standards of presentation and taste.
- Inventory Management: Comply consistently with standard portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures, and maintain sufficient levels of food products at line stations to ensure a smooth service.
- Food Handling and Storage: Portion food products prior to cooking according to standard portion sizes and recipe specifications, and handle, store, and rotate all products properly to ensure food safety and quality.
- Plate Presentation: Prepare items for broiling, grilling, frying, sautéing, or other cooking methods by portioning, battering, breading, seasoning, and/or marinating, and follow proper plate presentation and garnish set up for all dishes.
- Cleaning and Sanitation: Maintain cleanliness and sanitation at all times, performing closing clean-up duties and upholding company safety and sanitation requirements to ensure the health and safety of our guests and employees.
- Team Support: Assist in food prep assignments during off-peak periods as needed, and perform related duties such as helping to wash dishes as needed, preparing recycling, and cleaning around the kitchen.
