Job Overview

Thomas Cuisine is seeking a Culinary Supervisor for a senior health facility.

The Culinary Supervisor will play a pivotal role in assisting the Executive Chef and Food Services Director in overseeing the comprehensive food production process. This includes the establishment of systematic production techniques, adherence to standardized recipes, portion management, menu planning, and procurement needs. The Culinary Supervisor must ensure compliance with all client policies and regulatory standards within a senior living environment.

Compensation: $56,000+ DOE; includes full benefits, wellness initiatives, profit-sharing, and additional perks.

Key Responsibilities:

  • Directly oversee a team of 10-12 lower-level culinary staff.
  • Maintain confidentiality regarding company operations.
  • Adhere to attendance policies and comply with company and departmental regulations.
  • Uphold uniform and dress code standards.
  • Follow directives from the Executive Chef or Food Services Director regarding additional duties.
  • Ensure strict adherence to recipes for all food production.
  • Demonstrate proficient knife skills.
  • Capable of working across various kitchen stations and departments as needed.
  • Provide personal culinary tools.
  • Monitor all kitchen stations to ensure recipe compliance and minimize waste.
  • Train staff on menu specifications, sanitation, and food handling procedures.
  • Prepare daily production sheets and manage leftover records.
  • Conduct accurate inventory counts of all food storage areas.
  • Produce menu items in accordance with established timelines.
  • Maintain compliance with all HACCP standard operating procedures.
  • Plan and create requisitions for food ordering accurately.
  • Receive and inspect food products to ensure quality and proper storage.
  • Ensure cleanliness and sanitation of workstations by practicing a clean-as-you-go approach.
  • Identify and prepare various food items, including meats, vegetables, and starches, according to established recipes.
  • Label all prepared items with necessary information, including contents, prep date, use-by date, and preparer's initials.
  • Supervise and train lower-level staff in food preparation and cooking techniques.
  • Perform other duties as assigned.

Qualifications:

  • Minimum of three (3) years of progressive culinary or kitchen management experience preferred.
  • In-depth knowledge of food and catering trends with an emphasis on quality, production, sanitation, food cost management, and presentation.
  • Experience in fine dining, hotels, or country clubs is highly desirable.
  • Background in high-touch customer service environments.
  • Creativity and skills in plate presentation are essential.
  • Experience in high-volume, complex food service operations is highly desirable.
  • Proficient in computer applications, including Microsoft Office Suite and email.
  • ServSafe certification is required.
  • Must successfully complete criminal background checks and drug screenings.
  • Willingness to engage in patient/resident satisfaction initiatives.
