The position of a Culinary Specialist involves preparing dishes according to the precise standards set by the chef and the expectations of our patrons at Georgia Blue. The satisfaction of our guests is closely tied to the visual appeal, superior quality of the food, and the overall dining experience. As a Culinary Specialist, your responsibilities will include the accurate and efficient cooking of various food items such as meats, seafood, vegetables, soups, and more, alongside the preparation and portioning of ingredients prior to cooking.
Key Responsibilities
- Establishes workstations in accordance with restaurant protocols.
- Prepares all food items as instructed in a hygienic and timely manner.
- Adheres to recipes, portion controls, and presentation standards as outlined by Georgia Blue.
- Restocks supplies as necessary throughout the shift to ensure seamless service.
- Takes full responsibility for the quality of all food products served.
- Maintains a clean and sanitary workstation, including tables, shelves, grills, fryers, ovens, and refrigeration equipment, while demonstrating exceptional safety and organizational skills.
- Prepares items for various cooking methods by portioning, seasoning, and marinating as required.
- Handles, stores, labels, dates, and rotates all products correctly.
- Assists with food preparation tasks during slower periods as needed.
- Possesses knowledge of proper use and maintenance of all kitchen equipment.
- Contributes to the cleanliness and organization of the kitchen and storage areas.
- Closes the kitchen properly and follows the closing checklist for kitchen stations, assisting others as necessary.
- Participates in all scheduled employee meetings and offers suggestions for improvement.
- Performs additional tasks as directed by the Chef, Sous Chef, Kitchen Manager, or General Manager.
- Must have reliable transportation to and from work and arrive 10 minutes prior to the scheduled shift.
Qualifications
Education:
A high school diploma or equivalent is preferred.
Must be at least 16 years old.
Experience/Knowledge:
- Prior experience as a prep or line cook is required.
- Ability to communicate effectively with management and kitchen staff.
- Must be able to read and understand basic cooking instructions.
- Ability to follow printed recipes and plating specifications.
- Basic knowledge of professional cooking techniques and knife skills.
- Understanding of safety, sanitation, and food handling practices.

As a Culinary Specialist, you will collaborate with colleagues to ensure guest satisfaction. You are expected to take initiative and creatively solve problems, involving a manager only when necessary.

Physical Requirements
- Able to communicate verbally and audibly.
- Close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.
- Capable of standing for extended periods (up to 8 hours).
- Frequent standing with some walking.
- Able to reach, bend, stoop, and lift up to 40 pounds regularly, with occasional lifting/moving of 50 pounds.
- Regular use of manual dexterity and gross motor skills, with frequent use of both fine and bi-manual dexterity.
Working Conditions
- Primarily in an indoor environment.
- Varied schedule including evenings, holidays, and extended hours as needed.
- Exposure to heat/cold from kitchen equipment.
- May work near hazardous chemicals and with fumes or airborne particles.
- Noise levels in the work environment can range from moderate to loud.
Appearance/Uniform Standards
- Chef pants or black pants with a Georgia Blue shirt or chef coat, along with a Georgia Blue hat or hair net, black socks, and closed-toe black slip-resistant shoes.
- Facial hair must be well-groomed and kept minimal.
- Hair that is long enough to touch the shoulders must be tied back and secured.
Aprons will be provided and must be worn throughout the shift, changing when soiled.
