Job Summary

TerraBella Greenwood Place is seeking a highly skilled and experienced Director of Culinary Services - Fine Dining to lead our culinary team. As a key member of our community, you will be responsible for developing and implementing food services policies, procedures, and job descriptions.

Key Responsibilities:

  • Plan and implement menus and menu cycles that cater to cultural and regional food preferences and resident dietary guidelines.
  • Monitor the quality and consistency of food, including food temperatures, portion control, palatability, and attractiveness, and implement changes to ensure quality according to established standards.
  • Supervise food preparation, portioning, and garnishing to ensure adherence to prescribed methods and portion sizes.
  • Order food and chemical supplies for the kitchen, receive and validate deliveries, and conduct regular inventory.
  • Conduct Quality Assurance Audits and ensure safe and sanitary food handling practices.
  • Negotiate and sign food service agreements with vendors and select, schedule, and conduct orientation and in-service educational programs for personnel.
  • Monitor monthly expenditures and ensure compliance with budget.

Requirements:

  • Bachelor's degree in culinary arts or a related field preferred.
  • Minimum of 5 years of management experience in a food service environment.
  • Successful completion of food safety training required.
  • Ability to handle multiple priorities and work in a fast-paced environment.
  • Strong organizational skills and ability to meet deadlines.
  • Proficient computer skills.
  • Leadership skills, including the ability to inspire and motivate others.
