Position Overview:
SUMMARY
Oversee and coordinate all culinary operations for banquet and catering services at Willows Lodge.
KEY RESPONSIBILITIES
- Design and execute innovative banquet and catering menus.
- Plan food production in alignment with the established menu.
- Supervise and mentor Banquet Kitchen staff, providing constructive feedback.
- Set clear performance goals and standards to enhance productivity.
- Create daily task lists for Banquet Cooks.
- Provide guidance and support to kitchen staff.
- Ensure all food items meet high standards of quality and presentation.
- Enforce food specifications, portion control, and sanitation practices.
- Participate in the preparation and execution of banquet events.
- Inspect kitchen supplies and equipment for compliance with standards.
- Analyze recipes to determine pricing for menu items.
- Manage staff breaks and meal periods effectively.
- Order food and supplies for the Banquet Kitchen weekly.
- Conduct performance reviews for kitchen staff.
- Perform monthly inventory of banquet food items.
- Monitor production and labor to meet budgetary goals.
- Engage in off-site culinary events as needed.
- Provide recipes and guidance to Banquet Cooks.
- Participate in leadership meetings and culinary discussions.

EDUCATION
- Culinary degree with 3-4 years of relevant experience or equivalent combination of education and experience.
- Current food handler's certification.
