Middlebury College seeks a skilled Nighttime Cook to join our culinary team. As a key member of our kitchen operations, you will be responsible for preparing a variety of menu items using kitchen equipment, ensuring timely and high-quality meal preparation, and maintaining sanitation standards.
Key Responsibilities- Food Preparation: Prepare a variety of meats, seafood, poultry, vegetables, and other food for cooking in broilers, ovens, grills, fryers, and other kitchen equipment.
- Leadership in Food Production: Lead in food production work, including cutting vegetables, meats, and cheeses, as well as oven and toaster work.
- Quality Control: Consistently adhere to standard portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures.
- Food Safety and Handling: Observe proper food storage and handling procedures to ensure a safe and sanitary work environment.
- Serving and Sales: May serve alcohol to a diverse population, adhering to laws and regulations set forth by the Vermont Department of Liquor Control.
- Receiving and Inventory: Assist in receiving and taking deliveries, ensuring accurate inventory and storage of food and supplies.
- Cleaning and Sanitation: Maintain the highest standards of sanitary procedures, including cleaning work areas, filling out temperature and time sheets, and following cleaning checklists.
- Additional Responsibilities: May be asked to work on point-of-sale systems, assist with other dining operations, and be familiar with basic cash handling procedures.
- Education: High school diploma or equivalent preferred.
- Certification: Safe Serve Food Service Sanitation Certificate will be administered during training.
- Experience: Minimum three years of experience as a cook, with a minimum of three years of experience or training in cold food preparation, food storage, and shelf life, basic kitchen work, and knowledge of food service cleanliness and sanitation standards.
Must be able to stand for up to 8 hours with a 30-minute break, frequent bending and overhead reaching with twisting motions, lift 10-20 pounds numerous times during the day, and up to 50 pounds several times each day. Repetitive use of hands for grasping, pushing, pulling, and fine manipulation.
