About the Position:

We are seeking an experienced Food Service Supervisor to join our team at Palmer Station, Antarctica. As a senior culinary specialist, you will be responsible for overseeing all aspects of food service operations, ensuring the highest quality standards are met, and providing exceptional customer service to our guests.

Key Responsibilities:

  • Quality Control and Assurance: Develop and implement effective quality control and quality assurance strategies to maintain high standards of food safety and presentation.
  • Staff Development: Supervise and train staff members in all areas of the kitchen, serving, and dining spaces, ensuring they possess the necessary skills and knowledge to perform their duties efficiently and effectively.
  • Daily Operations Management: Maintain accurate records of daily operational and personnel information, providing timely reports to the Culinary Manager.
  • Menu Planning and Coordination: Initiate and approve significant menu changes, coordinating menu planning and adjustments with Sous Chefs.
  • Safety and Sanitation Compliance: Monitor compliance with safety and sanitation standards, implementing corrective actions as needed to ensure a safe working environment.
  • Equipment Maintenance and Repair: Conduct regular safety meetings and provide training to staff on proper equipment use, care, and cleaning.
  • Task Assignment and Project Management: Assign tasks and projects to personnel to maintain the overall organization of the food service department.

Requirements:

  • High school education or equivalent required; graduate of a culinary arts program preferred.
  • Minimum 7 years of cooking experience, with 3 years of supervisory responsibilities in high-volume facilities.
  • Current ServSafe Food Handler certification and valid driver's license required.
  • Previous experience with food services in Antarctica may be accepted in lieu of minimum experience.
