Position Overview:
The Line Cook is tasked with the preparation of all culinary offerings, adhering to standardized recipes for various dining services, including restaurants, room service, and banquets. This role emphasizes maintaining the highest standards of food quality and presentation while ensuring a clean and safe kitchen environment.
Key Responsibilities:
- Ensure cleanliness and organization of all storage areas.
- Prepare food and stations prior to service to guarantee prompt and efficient guest service.
- Skillfully prepare and present buffet items in accordance with established standards.
- Identify quality indicators in fresh produce, meats, and dairy products.
- Maintain a sanitary workspace with a strong understanding of food handling and storage protocols.
- Prepare banquet meals as specified in event orders.
- Assist in the preparation of meals for staff dining as directed by the Chef or Kitchen Supervisor.
- Follow hotel-standard recipes for all food preparations, with special dishes created under the guidance of the Chef.
- Efficiently break down buffet setups and store food and equipment properly post-service.
- Work at banquet food stations as scheduled.
- Familiarize oneself with the operation of fire safety equipment.
- Adhere to safe work practices to prevent injuries.
- Utilize production charts as per hotel standards.
- Support various kitchen roles as needed.
- Comply with health regulations and company policies regarding food safety and storage.
- Operate and maintain cleanliness of kitchen equipment.
- Implement a 'Clean As You Go' policy.
- Assist in the storage and rotation of food items following hotel procedures.
- Manage key access under supervision as required.
Qualifications:
- High School diploma or equivalent; experience in a hotel or related field is preferred.
- Culinary experience is essential.
- Flexibility for long hours may be required.
- Ability to exert up to 50 pounds of force occasionally and/or 20 pounds frequently.
- Capability to stand for the duration of the shift.
- Able to tolerate temperature variations in the kitchen environment.
- Thorough knowledge of menu items and preparation standards.
- Proficient in various cooking techniques including charbroiling, poaching, deep-frying, sautéing, braising, roasting, and par-cooking.
- Understanding of herbs and spices and their appropriate applications.
