Job Summary

We are seeking a highly skilled and experienced Chief Baker to join our team at Holland America Group. As a key member of our galley operations, you will be responsible for directing and overseeing the preparation of bakery products onboard for our guests and crew.

Key Responsibilities
  • Team Leadership: Direct, supervise, and assist the preparation of all bakery products onboard as per company standards.
  • Training and Development: Conduct regular training with all departmental members on food waste separation and environmental compliance as per Global HESS policies.
  • Operations Management: Prepare daily schedules for all bakery team members, evaluate, and conduct monthly ratings for each member of the bakery department.
  • Quality Control: Monitor and control actual hours worked for all bake shop team members, implement and execute food handling and cleaning procedures for the bake shop in accordance with USPH standards.
  • Food Cost Management: Control food cost by monitoring production, consumption, and forecasts, check quality and quantity of items ordered and received from stores.
  • Guest Satisfaction: Work closely with the Executive Chef to achieve the highest possible Guest Satisfaction Scores from bakery products served.
  • Facilities Management: Ensure proper food storage in accordance with USPH procedures and standard corporate recipes, report any discrepancies to the Executive Chef.
  • Cleaning and Maintenance: Supervise and inspect overall operation cleanliness and clean up after each service period following provided checklists and cleaning schedules.
  • Equipment Maintenance: Report and malfunctioning equipment or furnishings in need of repair or refurbishing to the Executive Chef.
  • Collaboration: Work closely with galley leadership and other department leaders, perform other job-related functions as assigned.

  • Communication: Good communication skills, acts as a corporate brand ambassador with onboard teams supporting and driving all long-term company goals and brand direction.
Requirements
  • Experience: 5+ years' experience in a 5-star+ hotel, cruise ship, or high-profile restaurant performing the functions of a similar position.
  • Education: Preferred: Degree from an accredited culinary college or university bakery program.
  • Certifications: Certification from an accredited advanced food safety program, extensive knowledge in VSP preferred.
  • Skills: Extensive kitchen machinery and knife safety knowledge, ability to effectively read, write, and speak English.
