The role of the Butcher Specialist is crucial, as the quality and efficiency of meat preparation significantly influence the overall dining experience of our guests. Ensuring top-notch meat cutting practices allows the restaurant to maximize its product usage, ensuring that every Golden Corral guest receives exceptional value in both food and service.

Meat Preparation:

• Prepares meat in accordance with product specifications and time efficiency standards.
• Adheres to the buffet production system to guarantee quality and compliance with shelf life.
• Regularly rotates cut and packaged meat to maintain freshness.
• Organizes and stocks the Meat Cooler following approved food safety protocols.

Sanitation Standards:

• To prevent cross-contamination, thoroughly sanitizes all surfaces between processing different types of meat.
• Identifies spoiled meat by its texture and odor.
• Maintains cleanliness in the meat preparation area in line with service and quality standards.
• Complies with local health regulations.

Operational Responsibilities:

• Utilizes administrative forms to track inventory levels of all meat products and assess production needs.
• Informs the Manager of any inconsistencies in product or equipment.
• Conducts opening and closing administrative tasks.
• Ensures proper maintenance of equipment as per the Equipment Maintenance manual.
• Completes assigned duties as per the roster.
