Job Summary:

The Texas Department of Aging & Disability Services is seeking a highly skilled Food Service Manager IV to oversee the daily operations of the Central Kitchen at Austin State Hospital. As a key member of the Food Service team, you will be responsible for planning, assigning, and supervising the work of preparing, cooking, and portioning food for regular, therapeutic, and texture-modified diets.

Key Responsibilities:
  • Plan, organize, and direct the daily tasks of the institutional food service production area.
  • Supervise and monitor daily activities of assigned personnel, ensuring the service area is running smoothly.
  • Coordinate the food safety program (HACCP) for the ASH food service unit, supervising and inspecting the sanitation of central kitchen and satellite areas.
  • Complete work orders properly and promptly, compiling data on work orders to find solutions to recurring problems.
  • Suggest and implement changes in the service and production area, recognizing and correcting trends as needed.
  • Participate in the selection of Food Service Personnel and participate in training and instruction of Food Service Personnel.
  • Inspect food and supplies received as necessary to ensure quality and quantity.
Requirements:
  • Knowledge of principles and practices of personnel management and supervision of personnel.
  • Knowledge of training of food service personnel.
  • Knowledge of methods, procedures, and techniques of preparing, serving, and storing foods in large quantities.
  • Knowledge of sanitation regulations, including federal, state, and HACCP procedures.
  • Ability to plan, organize, direct, and supervise the daily tasks of an institutional food service production area.
  • Ability to lift and move light to heavy objects (up to 25 lbs.) as appropriate safely.
  • Able to operate all kitchen equipment efficiently and safely.
  • Ability to perform arithmetical calculations with speed and accuracy.
  • Ability to identify problems and find solutions to those problems.
  • Ability to work competently under pressure meeting deadlines.
  • Ability to work independently.
  • Ability to understand and follow oral and written directions.
  • Ability to express oneself effectively and in a professional manner, communicating information clearly and effectively.
  • Ability to establish and maintain cooperative working relationships with food service staff, direct care staff, clients, and others.
