We are seeking a skilled Sushi Preparation Specialist to join our team at Levy, a leading provider of food and beverage services in the entertainment, sports, and restaurant industries.

Compensation: $24/hour

About the Role

The Sushi Preparation Specialist will be responsible for preparing high-quality sushi dishes for our customers. This includes storing all sushi produce, cleaning and storing it according to 310 Provisions Sushi Standards, and preparing fruits and vegetables and sushi rice for cooking.

  • Store all sushi produce, clean and store to the 310 Provisions Sushi Standards
  • Prepare fruits and vegetables and prepare sushi rice for cooking
  • Check in product with sushi cook 1 to learn quality check
  • Learn to prep fish, scrape fish, learn to roll sushi, mold rice, help plate and sauce
  • Fill out temperature logs
  • Basic knowledge of all kitchen and sushi equipment, including adjusting thermostat controls to regulate temperature of ovens, broilers, grills, steam kettles, rice cookers, and maki machine
  • Ability to inventory product, read menus (BEOs, Restaurant Orders)
  • Maintain 310 Provisions sushi standards and specifications related to food preparation and food handling on a daily basis, understands measurements requirements
  • Knowledge and understanding of food safety and sanitation guidelines including temperature requirements and HACCP (Hazard Analysis and Critical Control Points) while understanding the science in cooking temperatures
  • Responsible for checking and maintaining proper temperatures throughout preparation, cooling, holding and serving of food items including adjusting thermostat controls to regulate temperatures
  • Clean kitchen equipment
  • Store, label and date all food items according to policy
Requirements
  • Possess passion for culinary and delighting our Guests with food
  • Minimum 2 years experience in culinary field with a focus on high volume production
  • Culinary Education Degree or equivalent experience required with less than 2 years experience
  • Must be at least 18 years of age to be considered for this role
  • Proficient knife skills
  • Basic knowledge of technology
  • Proven knowledge of culinary and sushi techniques and terminology
  • Proven ability to read and understand recipes
  • Organizational skills; Ability to multi task and work in a very fast paced team environment
  • Speed, accuracy and efficiency are required and ability to work well under pressure
  • Ability to adapt to production requirements
