Position Overview

The Senior Culinary Supervisor plays a crucial role in ensuring the efficient operation of the Prepared Foods kitchen during designated shifts. This position involves overseeing the opening and closing of the department as per the schedule. Key responsibilities include supporting kitchen personnel, managing daily production tasks, addressing equipment and product quality concerns, resolving customer inquiries, and performing the duties of a production cook. The Senior Culinary Supervisor is vital to the kitchen team, providing immediate leadership in accordance with departmental standards and utilizing hands-on experience to suggest enhancements in kitchen operations.

Key Responsibilities

Oversee Kitchen Operations

  • Provide real-time supervision and assistance to kitchen staff, ensuring adherence to customer service and operational processes.
  • Identify and troubleshoot equipment and product quality issues by implementing standard operating procedures and escalating when necessary.
  • Address customer inquiries and complaints in alignment with organizational standards for service and staff treatment.
  • Ensure compliance with food safety protocols by all team members throughout the shift.
Manage Department Opening and Closing
  • Adhere to departmental and organizational procedures to secure the premises, conducting thorough opening and closing inspections, and effectively communicating staffing and supply needs.
  • Develop production schedules and outline workflow for each shift, communicating requirements to team members and making adjustments as needed.
  • Complete all opening and closing responsibilities, including cleaning, sanitation, and temperature checks, on time and to standard.
Perform Production Cook Duties
  • Demonstrate recipe execution and compliance with departmental standards in food preparation.
  • Exemplify safe work practices.
  • Balance supervisory responsibilities with hands-on cooking tasks effectively.
Train Kitchen Staff
  • Provide training to new and developing team members on proper techniques and behaviors.
  • Update and create departmental standard operating procedures and training materials as directed by management.
  • Utilize on-the-job experience to recommend updates or modifications to departmental processes as necessary.
  • Model effective communication practices to raise concerns and resolve issues.

Qualifications

Preferred:
  • Proficient knife skills, including the ability to perform specific cuts.
  • Experience with basic kitchen equipment maintenance.
  • Leadership experience in a commercial kitchen setting.
  • Demonstrated customer service skills.
  • Training in food safety and kitchen sanitation.
Minimum:
  • Basic math skills (addition, subtraction, multiplication, division).
  • Strong command of spoken and written English.
  • Effective communication skills and the ability to work collaboratively.
  • Ability to function effectively as part of a team.
  • Knowledge of basic kitchen safety and the ability to instruct others.
  • Time management skills to prioritize tasks effectively.
  • Experience in a commercial kitchen environment.

Physical Demands

While performing the duties of this position, the employee is regularly required to communicate effectively. The employee frequently stands, walks, uses hands for handling and fine manipulation, reaches with arms, and may need to climb, balance, bend, stoop, kneel, crouch, or crawl.
