The Meat Cutter plays a crucial role in ensuring the quality and quantity of product used in our restaurants. As a Meat Cutter at Golden Corral, you will be responsible for cutting meat according to product specifications and time standards. This includes using and following the buffet production system to ensure quality and shelf life compliance, rotating cut and boxed meat to ensure freshness, and stocking and arranging the Meat Cooler in accordance with approved food safety guidelines.

Key Responsibilities:

  • Cut meat according to product specifications and time standards.
  • Use and follow the buffet production system to ensure quality and shelf life compliance.
  • Rotate cut and boxed meat to ensure freshness.
  • Stock and arrange the Meat Cooler in accordance with approved food safety guidelines.

Cleanliness and Sanitation:

  • Sanitize all surfaces between production of chicken and any other meat to eliminate cross-contamination.
  • Recognize and remove meat that is sticky, slick, or smells bad.
  • Clean and sanitize the meat room according to cleanliness, service, and quality standards.
  • Follow local health department laws and regulations.

Operational Excellence:

  • Use administration forms to maintain an inventory of all meat products and determine production levels.
  • Notify the Manager of any discrepancies in product or equipment.
  • Perform opening and closing administrative procedures.
  • Maintain equipment according to the Equipment Maintenance manual.
  • Perform duty roster tasks.
