The Senior Culinary Specialist is responsible for executing advanced food preparation tasks, ensuring the preparation, cooking, portioning, distribution, and serving of meals that cater to both standard and specialized dietary needs.
This role includes mentoring and supervising staff, playing a crucial part in enhancing the quality of life and safety for residents.
Management has identified this position as a benchmark role to enhance consistency in classification, compensation, duties, and responsibilities.
This initiative will facilitate the swift creation and reclassification of culinary positions, aiding in the recruitment of qualified candidates and providing additional training resources for kitchen staff.
Key Responsibilities:
Regular attendance is required, with potential for specific shift schedules, rotating shifts, and overtime as needed.
Prepare, season, cook, and assemble meals for both standard and modified diets, adhering to sanitary practices.
Prepare and portion meals for special dietary needs, following prescribed guidelines.
Maintain a supply of snacks and prepare scheduled supplements.
Ensure compliance with Central Kitchen Operation Manual Procedures and oversee proper food handling practices.
Operate and maintain food service equipment safely, providing guidance to others on equipment usage.
Calculate food quantities needed for service, utilizing standardized menus and recipes to ensure adequate supply and minimize errors.
Safely distribute food, including special diets, in accordance with established policies.
Maintain cleanliness and sanitation in assigned areas, including equipment and food preparation spaces.
Train and supervise staff in food preparation, meal assembly, and sanitation protocols.
Complete necessary documentation, including equipment work orders and notes on subordinate performance.
Assist in operational functions such as receiving food deliveries and managing cash transactions in the facility canteen.
Participate in disaster response and recovery efforts as required, which may involve alternate shift assignments.
Required Knowledge, Skills, and Abilities:
Proficient in food preparation techniques, food storage standards, and sanitation regulations.
Familiarity with specialized diets and food textures.
Skilled in cooking, baking, and the use of food preparation equipment.
Ability to prepare large quantities of food according to specific dietary guidelines.
Competent in following recipes and maintaining accurate records.
Proficient in English, with the ability to follow written and verbal instructions.
Capable of performing basic math related to cooking and preparation.
Physically able to lift at least 25 pounds and work in varying temperature conditions.
Ability to work collaboratively with colleagues and residents.
Strong leadership skills to guide and train others in food preparation and safety procedures.
