Position Overview:The Culinary Supervisor is tasked with the preparation and serving of meals for our residents. This role involves cooking a diverse range of dishes to ensure the highest standards of quality and resident satisfaction, maintaining cleanliness in the food service area, and providing indirect supervision to Cooks and Food Service Workers.
Key Responsibilities include:
- Implementing sanitation and safety protocols while overseeing kitchen operations.
- Assuming responsibility for all kitchen activities in the absence of the Manager/Director.
- Facilitating the training of food service staff as needed.
- Assisting in the scheduling, cleaning, and upkeep of kitchen facilities and equipment according to established procedures.
- Preparing and cooking meals in accordance with recipes, menus, and dietary requirements, ensuring quality and palatability.
- Practicing portion control during meal preparation and service while supervising kitchen staff.
- Documenting food substitutions on daily menus and communicating with management.
- Assisting with inventory management, ordering, and food storage practices.
- Familiarity with food service emergency protocols.
Education:High school diploma or GED required.
Experience:Two to four years of recent culinary experience, preferably in a restaurant setting. Serve Safe Certification is required.
Knowledge:Understanding of safe food handling and preparation practices. Ability to minimize waste and present food attractively. Proficient in preparing a variety of meals, including soups, sauces, starches, and vegetables.
The selected candidate must successfully complete Eskaton's pre-employment assessments, which include a background check, drug screening, and health evaluations.
