Essential Duties and Responsibilities include, but are not limited to:
  • Assess and verify the freshness of daily fish supplies and ensure availability of all necessary sushi-making ingredients.
  • Create visually appealing dishes with a focus on artistic presentation, ensuring vibrant and colorful offerings.
  • Engage with diners, providing education and guidance, catering to both seasoned sushi enthusiasts and newcomers.
  • Maintain a tidy and organized work area, ensuring cleanliness and proper storage of perishable items.
  • Sharpen and clean sushi knives regularly.
  • Adhere to food standards as established by the Food & Beverage Director and Brewery Executive Chef.
  • Collaborate with the Brewery Executive Chef to develop innovative sushi recipes, following established recipes and control measures.
  • Manage inventory control, purchasing, and record-keeping.
  • Promptly communicate any issues or concerns to the Brewery Executive Chef.
  • Participate in the Food Safety Program and Training.

Qualifications

To excel in this role, candidates must successfully fulfill each essential duty. The following qualifications are representative of the knowledge, skills, and abilities required:

Education/Experience/Knowledge

Education Level: High School Diploma or equivalent required.

Experience: Minimum of 1 year as a sushi chef.

Knowledge: Familiarity with sushi-grade fish is essential.

Language Skills

Ability to read and interpret safety rules, operating manuals, and communicate effectively with guests and colleagues.

Mathematical Skills

Ability to perform basic arithmetic operations and compute rates, ratios, and percentages.

Reasoning Ability

Ability to apply common sense to follow instructions and solve problems effectively.

Certificates, Licenses, Registrations

Class B Gaming License (available for a nominal fee with a clean background check).

Physical Demands

The physical requirements for this position include:
  • Ability to stand for up to 8 hours.
  • Capability to walk, maintain balance, and navigate a busy kitchen and dining area.
  • Ability to reach overhead, climb, stoop, kneel, and crouch.
  • Frequent lifting or moving of up to 75 pounds.
  • Specific vision abilities required include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus.
