Position Overview

The Executive Chef will be responsible for spearheading our culinary and hospitality offerings, ensuring that every dish reflects our commitment to excellence. This role requires a creative and innovative approach to menu development, with a focus on complementing the energy of our venue.

Key Responsibilities

  • Culinary Leadership
    • Create and execute menu strategy in accordance with the company's vision and expectations.
    • Develop product mix, menu item optimization, and cost management.
    • Develop recipes and portion specifications, considering consumer tastes, ease of preparation, and established procedures and budgetary expectations.
  • Quality Control and Assurance
    • Make periodic and regular inspections to observe quality of food preparation and service.
    • Ensure food appearance, cleanliness, and sanitation of production and service areas, equipment, and employee appearance.
  • Training and Development
    • Coordinate all training activities for the kitchen team.
    • Identify and analyze training needs, and design and implement programs to address these deficiencies.
  • Operational Management
    • Prepare operational reports and analyses based on sales reports.
    • Analyze progress and adverse trends, and make appropriate recommendations.
    • Maintain a safe, secure, and healthy facility environment by establishing, following, and enforcing sanitation standards and procedures.
    • Establish and implement standard operating procedures (SOP's) for back-of-house operations.
    • Maximize profitability of the restaurant by managing food, labor, and other costs.
    • Responsible for food purchasing and inventory management.
    • Participate in marketing events and promotions to maximize social exposure.
    • Provide leadership over the back-of-house team, including interviewing, hiring, training, developing, performance management, and disciplining employees.
    • Properly train and educate front-of-house staff, including food safety handling and menu execution.
    • Maintain accurate recipe, menu, and ordering guides.

Requirements

  • Four or more years in a professional fine dining restaurant kitchen environment.
  • Two or more years in kitchen management, preferably as a Sous Chef or above.
  • Menu and recipe development and costing experience.
  • Serve Safe, or other food safety handling certification.
  • Experience in food purchasing and inventory management.
  • Experience with Profit and Loss statements and budget management.
  • Proficient in Microsoft Office, Excel, and Google Apps.
  • Understanding of menu design programs, preferably Adobe InDesign.
