  • Work Schedule: Monday to Friday (No Weekends)
  • Start Time: Between 6 AM and 7 AM until tasks are completed
  • Compensation: $18 per hour

Role Purpose:

The Meat Processing Apprentice is responsible for portioning, slicing, and packaging meats and seafood to meet specific sizes and weights according to operational specifications and customer preferences. You will ensure that all tools are cleaned and sanitized, adhering to safety, Good Manufacturing Practices (GMP), and quality standards while maintaining an efficient workflow.

Key Responsibilities:

  • Review daily work schedules, conduct safety checks on equipment, gather necessary supplies, and prepare for operations. At the end of the shift, secure all equipment and complete required documentation.
  • Examine cutting lists, retrieve stock from coolers, open cases, and dispose of waste properly.
  • Utilize knives to cut various sizes of raw meat and seafood (Beef, Pork, Lamb, Seafood) by hand, applying appropriate cutting techniques.
  • Clean and sanitize knives and tools, ensuring compliance with USDA regulations and standards.
  • Employ band saws or slicers to cut meat and seafood portions, verify weights, and place cut portions into designated containers.
  • Manage the removal of scrap materials and assist in maintaining cleanliness in the packaging area.
  • Support Packers and Sanitizers as needed.
  • Perform general housekeeping duties, ensuring the packaging work area and equipment are clean and comply with safety and quality regulations.
  • Carry out other related tasks as assigned.

Qualifications:

High School Diploma/GED or equivalent experience. No prior experience required, but a background in meat or seafood cutting is a plus.
