Austin Country Club is seeking a skilled and experienced Overnight Butcher to join our culinary team. As a key member of our team, you will be responsible for preparing and portioning various proteins, including beef, pork, poultry, lamb, and seafood, to ensure seamless service and special events.
Responsibilities:- Break down and portion various proteins according to precise guidelines
- Manage inventory, label, date, and store items to maintain freshness and reduce waste
- Collaborate with chefs and kitchen staff to ensure prep lists are accurately and promptly fulfilled
- Maintain a clean and organized workspace, adhering to the highest standards of food safety and sanitation
- Focus on portion control and minimizing waste to ensure consistency and cost-efficiency
- 2+ years of professional butchery experience, preferably in a high-volume, fine dining or catering environment
- Strong understanding of various cuts of meat and seafood, portioning, trimming techniques, and storage requirements
- Excellent knife skills and ability to work overnight shifts, stand for extended periods, and lift up to 50 lbs
- Understanding of food safety and sanitation standards, with ServSafe certification preferred
