Middlebury College seeks a skilled and experienced Nighttime Cook to join our culinary team. As a key member of our kitchen staff, you will be responsible for preparing a variety of menu items using kitchen equipment, maintaining high standards of sanitation and quality, and providing excellent customer service.
Key Responsibilities- Food Preparation: Prepare a variety of meats, seafood, poultry, vegetables, and other food for cooking in broilers, ovens, grills, fryers, and other kitchen equipment.
- Leadership and Teamwork: Lead in food production work, including cutting vegetables, meats, and cheeses, and performing oven and toaster work.
- Quality and Safety: Consistently adhere to our standard portion sizes, cooking methods, quality standards, and kitchen rules, policies, and procedures. Maintain a safe and sanitary work environment by observing proper food storage and handling procedures.
- Sales and Service: May serve alcohol to a diverse population, ensuring that sales conform to Vermont laws and regulations. Possess certification from the Vermont DLC.
- Receiving and Inventory: Assist in receiving and taking deliveries, ensuring that food storage and prep areas are clean and maintained.
- Sanitation and Cleaning: Maintain the highest standards of sanitary BOH procedures, complete temperature and time sheets, and follow cleaning checklists.
- Additional Responsibilities: May be asked to work on POS systems, help cover other dining operations, and be versed in basic cash operations.
- Education and Certification: High school diploma or GED preferred. Safe Serve Food Service Sanitation Certificate will be administered during training.
- Experience: Minimum three years of experience as a cook, with a minimum of three years of experience or training in cold food preparation, food storage, and shelf life, basic kitchen work, and knowledge of food service cleanliness and sanitation standards.
Must be able to stand for up to 8 hours with a 30-minute break, frequent bending and overhead reaching with twisting motions, lift 10-20lbs numerous times during the day, and up to 50lbs several times each day. Repetitive use of hands for grasping, pushing, pulling, and fine manipulation.
