Position Overview:

The Kitchen Sanitation Specialist is responsible for maintaining the cleanliness and organization of the kitchen and food preparation areas. This role is essential in ensuring a safe and hygienic environment for food preparation and service.

Key Responsibilities:

  • Maintain a clean and orderly kitchen area to prevent health and safety hazards.
  • Effectively wash dishes, utensils, pots, and pans in accordance with food safety standards and operational procedures.
  • Report any accidents, illnesses, or near-miss incidents to the supervisor immediately.
  • Demonstrate knowledge of emergency procedures and perform assigned roles during such situations.

Essential Functions:

The Kitchen Sanitation Specialist is tasked with ensuring the main kitchen dish area and food prep zones are kept in pristine condition. Responsibilities include washing and storing all cooking utensils, china, flatware, and glassware appropriately.

Job Duties:

  • Utilize dishwashing machines or hand wash all kitchen wares according to safety codes.
  • Polish silverware, platters, and chafing dishes to maintain presentation standards.
  • Collect and dispose of kitchen waste, ensuring garbage cans are emptied and relined.
  • Inspect garbage for any reusable items and ensure proper disposal.
  • Clean and polish all stainless steel surfaces in the kitchen, including shelves and appliances.
  • Regularly clean receiving and trash areas to uphold sanitation standards.
  • Sweep and mop kitchen floors to maintain cleanliness.
  • Store all wares in designated areas after cleaning.
  • Adhere to a cleaning schedule for dish machines and the dish area.
  • Assist with food preparation and the organization of storage areas.
  • Maintain inventory of cleaning supplies and equipment.
  • Handle all kitchen wares with care to minimize breakage.
  • Continuously monitor kitchen floors to ensure they are clean and free of debris.
  • Participate in weekly kitchen cleaning and maintenance tasks.
  • Safely store cleaning equipment in designated areas.
  • Utilize cleaning chemicals safely and responsibly.
  • Support food servers by prioritizing the washing of essential service items.
  • Consistently follow proper sanitation practices, including personal hygiene standards.
  • Attend departmental meetings as required.
  • Perform additional tasks as assigned by the Executive Chef.

Qualifications:

  • High School diploma or GED.
  • Food safety certification is required.

Physical Requirements:

  • Ability to stand for extended periods and perform physical tasks such as climbing, bending, and lifting up to 50 pounds.
  • Work in a hot, humid, and noisy environment.
